Broccoli Macaroni Salad
A vibrant, ultra-creamy broccoli macaroni salad packed with crisp colorful vegetables, tossed in a tangy, perfectly seasoned homemade dressing.
- Sixty-Second Blanching: Deactivates the enzymes that cause browning and softens the raw bite of the broccoli without losing its signature crunch.
- Emulsion Stability: Combining mayonnaise with sour cream provides a rich, stable base with a pleasant, lactic tang that clings to the pasta.
- Osmotic Balance: Pre-salting the pasta water ensures the noodles are seasoned from within, preventing them from absorbing all the dressing later.
I still remember the humid July afternoon my aunt brought her famous cold pasta bowl to our family reunion, only for the entire thing to turn into a watery, bland puddle within twenty minutes of sitting in the sun.
It was tragic.
The culprit wasn't her cooking skills, but rather the physics of raw vegetables. When you toss raw broccoli and un-salted pasta together with mayonnaise, the salt in the dressing draws out the moisture from the vegetables via osmosis, breaking down the emulsion and leaving you with a soggy mess.
My simple fix is a quick blanching step for the broccoli and a meticulously balanced dressing.
By treating the broccoli to a sixty-second plunge in boiling water, we lock in that gorgeous emerald color and soften the fibrous cell walls just enough to let the dressing penetrate.
Bear with me here, because the mayonnaise you choose actually matters. I tested this with three different brands of mayonnaise, and generic store brands failed every single test because they split under the acidity of the vinegar, whereas Duke's held strong and stayed incredibly creamy.

Ingredients
- 8 oz elbow macaroni
- 3 cups broccoli florets, cut into bite-sized pieces
- 1/2 cup red bell pepper, finely diced
- 1/2 cup yellow bell pepper, finely diced
- 1/3 cup red onion, finely minced
- 1/2 cup sharp cheddar cheese, cubed small
- 1/2 cup Duke's mayonnaise
- 1/4 cup sour cream
- 1.5 tbsp apple cider vinegar
- 1 tbsp granulated sugar
- 1 tsp Diamond Crystal kosher salt
- 1/4 tsp freshly cracked black pepper
Directions
- Bring a large pot of water to a rolling boil and season generously with salt. Cook the elbow macaroni according to package instructions until al dente.
- During the last 60 seconds of boiling the pasta, toss the broccoli florets directly into the pot. Drain them along with the pasta and immediately plunge them into an ice bath to shock them, preserving their bright green color.
- In a large mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, Diamond Crystal kosher salt, and black pepper until completely smooth.
- Pat the cooled pasta and broccoli completely dry with clean paper towels. Any excess water will dilute the dressing and make it run off.
- Add the dried pasta, broccoli, diced red and yellow bell peppers, minced red onion, and cubed cheddar cheese to the bowl with the dressing.
- Gently fold all the ingredients together using a rubber spatula until everything is evenly coated. Chill in the refrigerator for at least 1 hour before serving. </
Notes
- Brand Recommendation: I highly recommend Duke's mayonnaise for this recipe; if you use Diamond Crystal kosher salt, 1 teaspoon is perfect, but scale back to 1/2 teaspoon if you are using Morton's to avoid over-salting.
- Science-Backed Rationale: The science behind the ice bath is crucial: it instantly stops the residual heat from cooking the broccoli further, preventing the degradation of chlorophyll which turns the florets a sad, muddy brown.
- Preemptive Workflow Warning: Do not skip drying the pasta and vegetables; if they are even slightly damp, the water-soluble starch on the pasta will repel the fat-based dressing, causing it to slide off instead of clinging.
- Storage Behavior: After a day in the fridge, the macaroni will absorb some of the dressing; simply stir in a tablespoon of sour cream or milk to loosen it up and restore its original creaminess.
Serving Suggestions
This creamy salad is the ultimate companion for outdoor gatherings, family reunions, or quick weekday lunches. Here are a few fantastic ways to serve and pair it:
- Pair this creamy salad with a hearty main like our BBQ Bacon Cheeseburger Subs for the ultimate backyard cookout experience.
- Serve it alongside crispy, golden appetizers such as Crispy Fried Onion Balls to add a delightful textural contrast.
- It makes a refreshing side dish next to a savory bacon grilled cheese sandwich for a quick and comforting weekday lunch.
- Garnish the top with extra freshly cracked black pepper and a sprinkle of smoked paprika just before serving to make the colors pop.
Storage and Reheating
Keep it cold.
Store any leftovers in an airtight container in the refrigerator for up to four days. Because of the mayonnaise and sour cream base, this salad does not freeze well at all.
When you are ready to eat it again, give the salad a vigorous stir with a heavy spoon to redistribute the oils and fats that may have settled at the bottom of the bowl. If it looks a tad dry, a tiny splash of apple cider vinegar or a dollop of sour cream will wake those flavors right back up.
Ingredient Substitutes
If you need to make some adjustments based on what is currently in your pantry, here are some easy swaps:
- Elbow Macaroni: Swap in ditalini, rotini, or even make a fun twist like our Big Mac Pasta Salad using shell pasta.
- Sour Cream: Greek yogurt works beautifully here as a high-protein alternative, offering a similar tangy profile.
- Red Onion: If the bite of red onion is too sharp for you, substitute chopped green onions or chives for a milder flavor.
- Cheddar Cheese: Colby Jack or Monterey Jack cubes make excellent substitutes if you want a milder cheese flavor.
This broccoli macaroni salad is bound to become your new potluck staple. It is incredibly easy to whip up, holds up beautifully in the fridge, and brings a vibrant crunch to any plate. I hope it brings as much joy to your table as it does to mine!
