  • 2 cloves garlic, minced
  • 1.5 teaspoons Diamond Crystal kosher salt

Directions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill.
  2. In a medium bowl, whisk together the soy sauce, honey, sesame oil, grated ginger, minced garlic, and Diamond Crystal kosher salt.
  3. Add the cubed chicken to the bowl and toss to coat, letting it marinate at room temperature for no more than 20 minutes.
  4. Thread the chicken, pineapple chunks, bell peppers, and red onion alternately onto the soaked skewers.
  5. Preheat your grill or grill pan to medium-high heat and lightly oil the grates.

  • I highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt, cut the volume by half to avoid over-salting.

  • Keep a close eye on the grill during the last two minutes; the honey in the glaze has a low smoke point and will burn quickly if left unattended.
