- 4 oz silver tequila
- 4 oz pineapple juice (preferably fresh or cold-pressed)
- 2 oz unsweetened coconut milk (canned, well-shaken)
- 1.5 oz fresh lime juice
- 1 oz agave nectar
- 1 pinch Diamond Crystal kosher salt
- Ice for shaking and serving
- Toasted coconut flakes and lime wheels for garnish
Directions
- Run a lime wedge around the rim of two rocks glasses, then dip them into a shallow dish filled with toasted coconut flakes and a pinch of salt.
- In a cocktail shaker, combine the silver tequila, pineapple juice, unsweetened coconut milk, fresh lime juice, agave nectar, and a pinch of kosher salt.
- Fill the shaker with ice, seal it tightly, and shake vigorously for a full 20 seconds until the outside of the shaker is frosty and cold to the touch.
- Fill your prepared glasses with fresh ice and strain the margarita evenly between them, then garnish with a fresh lime wheel. </

- I highly recommend using Diamond Crystal kosher salt; if you are using Morton's, cut the volume by half (use just a tiny pinch) to avoid over-salting.
- Unsweetened canned coconut milk contains natural emulsifiers like lecithin, which helps bind the fat-soluble flavor compounds of the tequila with the water-based pineapple juice.
- Do not use cream of coconut (like Coco LĂłpez) for this specific recipe; the high sugar content and different fat structure will cause the drink to separate and turn cloyingly sweet.
- While best served fresh, any leftover margarita mix (without ice) can be stored in a sealed jar in the fridge for up to 24 hours, though you will need to give it a violent shake before serving as the coconut fat will naturally solidify at cold temperatures.
