Ingredients
- 2 cups fresh sweet cherries, pitted and halved
- 1/2 cup granulated sugar
- 3/4 cup freshly squeezed lime juice (about 6-8 limes)
- 6 oz vodka
- 2 cups sparkling water or club soda
- Ice cubes
- Lime wheels and fresh cherries for garnish
Directions
- In a medium bowl, combine the halved cherries and granulated sugar. Use a muddler or the back of a wooden spoon to crush the cherries, releasing their juices. Let sit for 10 minutes to macerate.
- Strain the cherry syrup through a fine-mesh sieve into a pitcher, pressing down on the solids with a spatula to extract every drop of liquid.
- Pour the freshly squeezed lime juice and vodka into the pitcher with the cherry syrup. Stir well to combine.
- Fill four highball glasses with ice. Divide the cherry-lime mixture evenly among the glasses.
- Top each glass with sparkling water and stir gently. Garnish with lime wheels and fresh cherries.
Notes
- I highly recommend using Diamond Crystal kosher salt (just a tiny pinch, about 1/16 tsp, to make the flavors pop; if using Morton, cut it in half).
- Macerating the cherries in sugar works via osmosis, drawing out the water and flavor compounds from the fruit walls without heating, which keeps the cherry flavor tasting fresh rather than jammy.
- Do not use bottled lime juice. The heat-pasteurization process destroys the delicate, heat-sensitive terpenes in the lime oil, leaving you with a dull, bitter taste.
- The cherry syrup can be made up to 3 days in advance and kept in a sealed glass jar in the fridge, but do not add the sparkling water until right before serving, or it will go completely flat.

Do not freeze this mixture with the alcohol already added, as the ethanol will prevent it from freezing solid, resulting in a slushy mess that separates.
