  • 1/2 tsp Diamond Crystal kosher salt
  • Fresh mint leaves, for garnish

Directions

  1. In a small bowl, whisk together the honey, fresh lime juice, red pepper flakes, and Diamond Crystal kosher salt until the honey is fully emulsified and runny.
  2. Carefully cut your pineapple, mango, and feta into uniform 1-inch cubes. Ensure the feta is cold from the fridge to maintain its structure.
  3. Using a toothpick, gently pre-drill a pilot hole through the center of each feta cube to prevent splitting.
  4. Thread a piece of pineapple, a mint leaf, a cube of feta, and a cube of mango onto each skewer. Repeat until all ingredients are used.
  5. Arrange the skewers on a serving platter and generously drizzle the chili lime honey glaze over them just before serving.

Notes

  • For the salt, I always use Diamond Crystal kosher salt; if you are using Morton's or fine table salt, cut the volume in half to avoid over-salting.
  • Keep your feta ice-cold until the very moment of skewering. The cold temperature keeps the fat molecules in the cheese solid, which reinforces the protein matrix and prevents crumbling.
  • Do not drizzle the chili lime honey glaze ahead of time. The osmotic pressure of the sugar in the honey will draw moisture out of the fresh fruit, turning your beautiful platter into a watery mess within twenty minutes.
  • Leftovers do not store well on the skewers. If you have extras, slide the ingredients off into a container and enjoy them as a messy but delicious fruit salad the next day.
