  • 0.75 cup (180ml) neutral vegetable oil
  • 0.25 cup (60g) sour cream, room temperature
  • 4 large eggs, room temperature
  • 2 cups (200g) finely grated carrots, firmly packed and wrung dry
  • 1 cup (120g) shelled pistachios, toasted and finely chopped
  • 8 oz (225g) brick cream cheese, softened
  • 0.5 cup (115g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 tsp pure vanilla extract

Directions

  1. Preheat your oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and Diamond Crystal kosher salt.
