Directions

- Pour the blended pistachio milk, maple syrup, and vanilla extract over the dry ingredients.

- Cover tightly and refrigerate for at least 4 hours, or preferably overnight, to allow the starch matrix to fully soften.
Notes
- Salt Conversion: This recipe specifies Diamond Crystal kosher salt. If you are using fine table salt, reduce the measurement to 1/8 teaspoon to avoid over-seasoning.
- Oat Selection: Always use old-fashioned rolled oats. Quick oats retain less structural integrity because their starch molecules have been pre-gelatinized, which leads to a mushy texture.
