My first attempt at baking pizza at home ended with a smoke detector screaming at my face while I scraped charred cornmeal off the bottom of my oven. I had tried to slide a fully loaded, raw dough round onto a cold baking sheet, and the entire thing collapsed into a sad, doughy heap.

Directions

  1. Preheat your oven to 500°F (260°C) with a baking steel or large cast-iron skillet inside on the top rack for at least 45 minutes.
  2. Stretch the room-temperature dough on a piece of parchment paper, using your knuckles to gently pull it into a 12-inch circle without popping the air bubbles in the rim.
  3. Mix the minced garlic with the olive oil and brush it lightly over the entire surface of the dough, then sprinkle with Diamond Crystal kosher salt.
  4. Spread the basil pesto evenly over the dough, leaving a 1-inch border for the crust.
  5. Distribute the shredded low-moisture mozzarella and grated parmigiano-reggiano evenly over the pesto layer.
  6. Slide the pizza (still on the parchment paper) directly onto the hot steel or skillet and bake for 8 to 10 minutes until the crust is deeply browned and the cheese is bubbly.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have Morton's or fine table salt, cut the volume in half to avoid an over-salted crust.
  • Low-moisture mozzarella is crucial here because fresh mozzarella releases too much water during baking, which breaks the emulsion of the pesto and leaves you with a puddle.
  • Do not leave your stretched dough sitting on the parchment paper with toppings for more than five minutes before baking, or the moisture will make it stick to the paper like glue.
  • Leftover slices will lose their crispness in the fridge, but you can easily revive the crunchy bottom by reheating them in a dry skillet over medium heat for three minutes.
