  • 1/2 cup sour cream
  • 1 large avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Directions

  1. Heat a large, dry skillet over medium-high heat. Add the riced cauliflower and cook, stirring frequently, for 5 to 7 minutes until the moisture evaporates and it is lightly toasted. Remove from the skillet and set aside.
  2. In the same skillet, heat the olive oil over medium heat. Add the ground turkey, breaking it up with a wooden spoon, and cook until completely browned.
  3. Sprinkle the taco seasoning and Diamond Crystal kosher salt over the meat. Pour in 1/4 cup of water, stir to combine, and let it simmer for 3 minutes until the sauce clings to the meat.
  4. Assemble your bowls by dividing the dry-sautéed cauliflower rice equally among four meal prep containers.
