I still remember the Tuesday afternoon I tried to shred chicken breast with two cheap plastic forks while my toddler screamed for juice, only to watch a dry chunk of meat fly across the kitchen and land directly in the dog's water bowl.
It was a complete disaster.
Most shredded chicken recipes fail because they instruct you to boil boneless breasts until they reach the texture of old shoe leather. I once tried using a handheld stand-mixer to shred the chicken—a popular internet hack—but it turned the meat into a dry, woolly lint-like texture that was completely inedible. The high-speed blades simply shredded the delicate protein fibers to pieces.
The simple fix is to ditch the boiling water and gently poach bone-in, skin-on chicken thighs in a shallow, aromatic bath of chicken broth, garlic, and cumin. Think about this in terms of physics: bone-in thighs contain high amounts of collagen which melts into gelatin during cooking, coating the protein matrix and keeping the meat incredibly juicy. I tested this with six different cuts, and bone-in thighs won hands down because they cling to the spices beautifully. Plus, you can easily shred them with your fingers once they cool down a bit, saving your forearms from aching.

Ingredients
- 1 kg bone-in, skin-on chicken thighs
- 2 cups chicken broth
- 1 tbsp Diamond Crystal kosher salt (or 1.5 tsp fine sea salt), divided
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 3 ripe Hass avocados
- Juice of 2 fresh limes, divided
- 1/4 cup finely chopped fresh cilantro
- 1 can (400g) black beans, drained and rinsed
- 2 cups cooked white or brown rice
- 1 cup cherry tomatoes, halved
Directions
- Place the chicken thighs, chicken broth, cumin, garlic powder, smoked paprika, and half the kosher salt in a medium pot. Bring to a gentle simmer over medium heat.
- Cover the pot and cook for 20 to 25 minutes, or until the chicken reaches an internal temperature of 74°C (165°F). Fish the chicken out of the broth and let it cool on a cutting board.
- While the chicken cools, slice the avocados and scoop the flesh into a bowl. Add the remaining kosher salt, half the lime juice, and cilantro, then mash with a fork until chunky.
- Once the chicken is cool enough to handle, discard the skin and bones. Shred the meat into bite-sized pieces using your fingers or two forks.
- Warm the black beans in a small saucepan with a splash of water, a pinch of cumin, and the remaining lime juice.
- Assemble the bowls by dividing the cooked rice, shredded chicken, seasoned black beans, cherry tomatoes, and a generous scoop of guacamole among four bowls. </
Notes
- I highly recommend using Diamond Crystal kosher salt. If you only have standard table salt, cut the measurement in half (use 1.5 teaspoons instead of 1 tablespoon) to avoid over-salting.
- Bone-in chicken thighs are essential here because the bone acts as a thermal insulator, allowing the meat to cook more evenly. The surrounding connective tissue melts into gelatin, which coats the shredded meat and prevents it from drying out.
- Keep a close eye on the poaching liquid. If it boils too vigorously, the protein matrix in the chicken will tighten up and become tough; keep it at a bare, gentle simmer.
- Guacamole naturally oxidizes and turns brown when exposed to air. To prevent this after a day in the fridge, press a sheet of plastic wrap directly onto the surface of the guacamole to eliminate any air pockets before sealing the container.
- Avoid using a food processor for the guacamole. The high-speed blades rupture too many fat cells, turning your rustic dip into a watery, baby-food-like paste. After a year of washing my favorite stainless steel potato masher, I can confidently say it still beats any electric gadget for getting that perfect chunky texture.

Store the shredded chicken and black beans in airtight glass containers in the fridge for up to four days. They reheat beautifully in the microwave or in a skillet with a splash of chicken broth to restore moisture.
The guacamole is a different story because avocado is notorious for turning gray and unappealing within hours. To save it, squeeze a thin layer of fresh lime juice over the top, press plastic wrap directly onto the surface, and eat it within twenty-four hours.
Do not freeze the guacamole or the fresh tomatoes. The freezing process destroys their delicate cellular structures, leaving them mushy and watery upon thawing.
The chicken, however, freezes beautifully.
