Directions

  1. Combine the frozen raspberries, fresh lime juice, and honey in a blender. Blend on high speed until completely smooth.
  2. Press the raspberry mixture through a fine-mesh sieve to remove the seeds if you prefer a perfectly smooth texture, then set the puree aside.
  3. Rinse the blender jar thoroughly. Add the pineapple juice, cream of coconut, white rum (if using), and crushed ice.
  4. Blend on high until the coconut mixture is velvety, thick, and completely uniform.
  5. Spoon half of the reserved raspberry puree into the bottom of two tall glasses.
  6. Slowly pour the blended coconut mixture over the raspberry layer, then drizzle the remaining puree over the top. Gently swirl with a straw and garnish with fresh berries.
