Raspberry Pistachio Mini Pavlovas
Learn how to make perfect Raspberry Pistachio Mini Pavlovas with a crisp shell, marshmallow center, fresh whipped cream, and nutty pistachios.
- Acid Stabilization: Adding cream of tartar lowers the pH of the egg whites, which prevents the proteins from over-coagulating and drying out.
- Slow Dehydration: Baking at a low temperature gently evaporates moisture, creating a crisp exterior shell while preserving a soft, marshmallow-like interior.
- Fat-Free Whipping: Ensuring all equipment is completely grease-free allows the egg whites to expand to their maximum volume without collapsing.
My first attempt at meringue ended with me scraping a sticky, weeping puddle of sugar off my old aluminum baking sheet while my wrist throbbed from ten minutes of frantic whisking. I had tried to whip the whites in a plastic bowl that, unbeknownst to me, held a microscopic film of leftover salad oil.
It was an absolute disaster.
The science here is pretty unforgiving because even a single molecule of fat will coat the egg white proteins, preventing them from cross-linking into a stable, air-trapping matrix. They just collapse. When you try to force sugar into a weak protein structure too quickly, the crystals don't dissolve, leaving you with a gritty foam that weeps syrup in the oven.
But once you master the simple physics of whipped whites, pavlova becomes hands down the easiest showstopper dessert in your arsenal. We just need a clean glass bowl and a splash of lemon juice.
Trust me on this one, you do not need a pastry degree to pull this off. Let's get our stand mixers ready.

Ingredients
- 4 large egg whites (room temperature)
- 1 cup (200g) superfine sugar (caster sugar)
- 1/4 tsp cream of tartar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1 tbsp powdered sugar
- 1 cup fresh raspberries
- 1/4 cup shelled pistachios, finely chopped
- A tiny pinch of Diamond Crystal kosher salt (about 1/16 tsp)
Directions
- Preheat your oven to 250°F (120°C) and line a large baking sheet with high-quality parchment paper.
- Wipe down your mixing bowl and whisk attachment with a paper towel dipped in lemon juice to ensure absolutely no grease remains.
- Pour the room-temperature egg whites and cream of tartar into the bowl, then whip on medium speed until soft peaks form.
- Increase the speed to high and add the superfine sugar one tablespoon at a time, letting it fully incorporate before adding the next.
- Continue whipping until the meringue holds stiff, glossy peaks and you can no longer feel any sugar granules when rubbing a bit of foam between your fingers.
- Spoon or pipe the mixture into six 3-inch mounds on the parchment paper, using the back of a spoon to create a shallow well in the center of each.
- Bake for 1 hour and 15 minutes, then turn off the oven and let the pavlovas cool completely inside with the door slightly cracked.
- Whip the heavy cream, powdered sugar, vanilla, and salt until medium peaks form, then spoon into the cooled pavlova shells and top with fresh raspberries and chopped pistachios.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have Morton's, use half the amount (about a tiny pinch) to avoid over-salting the cream.
- Superfine sugar (caster sugar) is essential because its smaller crystal size dissolves rapidly in the egg white moisture, preventing weeping and grittiness.
- Do not open the oven door during the first hour of baking; sudden temperature drops will cause the delicate meringue shells to crack and collapse.
- Unfilled meringue shells can be stored in an airtight container at room temperature for up to 3 days, but once filled with whipped cream, they must be eaten within 4 hours before they turn soggy.

Serving Suggestions
These elegant mini pavlovas are best assembled right before serving to maintain their contrasting textures. Here are a few ways to plate and enhance them:
- Drizzle with a quick raspberry coulis for an extra punch of tartness.
- Dust lightly with extra powdered sugar right before guests arrive.
- Serve alongside a hot cup of tea or coffee to balance the sweetness.
- Add a sprig of fresh mint to each plate for a pop of vibrant green.
- Pair them with our creamy No-Bake Pistachio Cheesecake on a dessert table for a pistachio-themed party.
Storage and Reheating
Meringue is notoriously sensitive to humidity, acting like a sponge for any moisture in the air. If you live in a humid climate, store the unfilled shells in a strictly airtight container immediately after they cool.
Do not refrigerate unfilled shells. The cold, damp environment of a refrigerator will turn your crisp pavlovas into a sticky, melted mess within hours.
Once you dollop that fresh whipped cream on top, the clock starts ticking. The moisture from the cream will slowly migrate into the meringue, softening that beautiful crisp shell.
Eat them quickly.
Ingredient Substitutes
If you need to make adjustments based on what is in your pantry, here are some reliable swaps:
- Superfine Sugar: If you can't find caster sugar, pulse regular granulated sugar in a food processor for 30 seconds.
- Cream of Tartar: Substitute with an equal amount of fresh lemon juice or white vinegar to provide the necessary acid.
- Fresh Raspberries: Swap in blackberries, sliced strawberries, or passion fruit pulp for a different fruity contrast.
- Pistachios: Use toasted sliced almonds or macadamia nuts if you want a different nutty crunch.
There is something incredibly satisfying about watching simple egg whites transform into these elegant, cloud-like nests. Tap your whisk against the side of the bowl, pile on the cream, and enjoy every single crispy, marshmallowy bite.
