- Rinse the salted cucumbers quickly under cold water to remove excess surface salt, then spread them onto a clean kitchen towel and pat them thoroughly dry.
- Add the dried cucumbers, red onions, and chopped fresh parsley to the bowl with the dressing. Toss gently to combine, then chill in the refrigerator for at least 15 minutes before serving.
Notes
- I highly recommend using Diamond Crystal kosher salt. If you only have Morton's coarse kosher salt, cut the volume by half (use 1/2 tablespoon instead of 1 tablespoon) to avoid over-salting.
- Soaking the red onions in ice water for ten minutes leaches out the harsh, volatile sulfur compounds (specifically thiosulfinates) without losing their satisfying physical crunch.
- Do not skip patting the purged cucumbers dry with a clean kitchen towel. Any lingering surface moisture will prevent the oil-soluble flavor compounds in the dressing from clinging to the vegetables.
- While this salad holds up beautifully, after twenty-four hours in the fridge, the cucumbers will naturally lose a bit more turgor pressure and soften slightly, though the flavor actually deepens.
