Directions

- Place the beaten eggs in a second shallow dish.
- Dip each chicken breast into the egg wash, letting the excess drip off, then press firmly into the flour-Parmesan mixture to coat completely.
- Heat the olive oil and 2 tablespoons of butter in a large, heavy skillet over medium-high heat until the butter foams.
