  • 1/4 cup (50g) granulated sugar (for the cinnamon ripple)
  • 1 tbsp ground cinnamon (for the cinnamon ripple)

Directions

  1. Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5-inch loaf pan with butter or nonstick spray.
  2. In a small bowl, mix the 1/4 cup sugar and 1 tablespoon ground cinnamon for the ripple; set aside.
  3. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with just a few small chunks.
  4. Whisk the melted butter, granulated sugar, egg, and sour cream into the mashed bananas until fully combined.
  5. Fold in the all-purpose flour, baking soda, and kosher salt using a rubber spatula just until no dry flour pockets remain.
  6. Pour half of the batter into the prepared loaf pan, sprinkle half of the cinnamon-sugar mixture evenly over it, then layer the remaining batter on top.
