  • 6 large flour tortillas (burrito size)
  • 2 tbsp vegetable oil
  • 1/2 cup sour cream
  • 2 tbsp mayonnaise
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tsp lime juice
  • 1/2 tsp Diamond Crystal kosher salt

Directions

  1. Preheat your oven to 400°F (200°C) and lightly grease a large baking sheet with cooking spray.
  2. In a large skillet over medium-high heat, brown the ground beef until fully cooked, draining any excess grease.
  3. Stir in the taco seasoning and water, bringing it to a simmer until the liquid is mostly absorbed, then stir in the black beans.
  4. Lay the flour tortillas on a clean work surface and distribute the Spanish Rice, seasoned beef mixture, and shredded cheese evenly down the center of each.
  5. Fold in the sides of each tortilla and roll them up tightly, placing them seam-side down on the prepared baking sheet.

Notes

  • I highly recommend using Diamond Crystal kosher salt for the chipotle sauce; if you only have Morton's kosher salt or fine table salt, cut the measurement in half to avoid an overly salty sauce.
  • The addition of mayonnaise to the chipotle sauce isn't just for flavor; the egg yolks act as a natural emulsifier, keeping the sauce from separating when drizzled over the hot burritos.
