Sheet Pan Garlic Butter Chicken
A foolproof sheet pan garlic butter chicken recipe with perfectly roasted, tender vegetables and juicy chicken breasts, all tossed in a rich garlic butter sauce.
- Staged Roasting: Adding the denser vegetables first ensures everything reaches peak tenderness at the exact same moment.
- Emulsified Garlic Butter: Whipping the butter with a splash of chicken broth prevents the sauce from breaking into a greasy pool on the pan.
- High-Heat Maillard Reaction: Roasting at 425°F (218°C) caramelizes the vegetable sugars while keeping the chicken breast incredibly juicy.
I still remember the Tuesday evening I stood over my kitchen sink, scraping charred broccoli off a warped baking sheet with my bare fingernails.
I wanted to cry.
That flimsy pan failed every single test because its thin metal couldn't distribute heat evenly, leaving my chicken bone-dry and the zucchini a watery mush.
Bear with me here, because the physics of this is simple: different ingredients require different cooking times, and crowding them onto a cold sheet pan ruins the steam-to-roast ratio.
To fix this, we need to leverage basic physics by cutting our vegetables to specific sizes and adding them to the sheet pan in stages. Toss the chicken in oil-soluble flavor compounds like garlic powder and paprika first, which helps create a beautiful Maillard reaction without burning the fresh garlic.
It works every single time.

Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 lb baby red potatoes, halved
- 3 medium carrots, sliced into 1/2-inch rounds
- 2 cups broccoli florets
- 4 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1.5 tsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- 2 tbsp olive oil
Directions
- Preheat your oven to 425°F (218°C).
- Toss the halved baby potatoes and sliced carrots with olive oil, 1 teaspoon of Diamond Crystal kosher salt, and black pepper directly on a heavy-duty rimmed sheet pan.
- Spread the potatoes and carrots into a single layer and roast for 15 minutes until they just begin to soften.
- While the root vegetables roast, whisk the melted butter, minced garlic, paprika, Italian seasoning, and the remaining salt in a medium bowl. Toss the cubed chicken in this mixture. Tap your tongs against your hip to get ready.
- Carefully remove the hot sheet pan from the oven. Push the potatoes and carrots to the sides, then add the broccoli florets and the seasoned chicken to the center of the pan.
- Return the pan to the oven and roast for an additional 12 to 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Notes
- We use Diamond Crystal Kosher Salt. If you are using Morton's kosher salt, reduce the measurement by half to avoid over-salting your meal.
- Butter contains water which steam-cooks the chicken slightly, keeping the protein matrix tender while the fat aids in browning.
- Do not add the minced garlic in the first roasting stage; garlic burns at high heat and will turn bitter. Add it only with the chicken during the second stage.
- After a day in the fridge, the butter will solidify. Reheat gently with a splash of water to re-emulsify the sauce.
- Use a heavy-duty, rimmed half-sheet pan. Flimsy pans warp under high heat, causing the butter to pool in one corner and burn.
Serving Suggestions
This sheet pan wonder is a complete meal on its own, but you can easily round it out with a few simple additions to make dinner feel even more special.
- Serve over a bed of fluffy quinoa or white rice to soak up the extra garlic butter sauce.
- Pair with our honey garlic butter roasted carrots for an extra touch of sweetness on the plate.
- Add a crisp side salad like our strawberry spinach salad to cut through the rich butter.
- Garnish with fresh lemon wedges to squeeze over the chicken right before eating.
- Serve alongside warm crusty bread to mop up every last drop of garlic butter.
Storage and Reheating
Store any leftovers in an airtight glass container in the fridge for up to four days. The garlic butter will solidify into a pale, opaque glaze over the chicken and vegetables, which looks unappealing but is completely normal.
Don't panic.
To bring it back to life, avoid the microwave if you can, as it tends to turn the chicken rubbery and the broccoli mushy.
Instead, slide everything back onto a sheet pan and heat at 350°F (175°C) for about ten minutes, tossing once. This melts the butter back into a glossy sauce and restores the crisp edges of the potatoes.
Ingredient Substitutes
If you don't have everything in your pantry, don't worry. Here are some easy swaps that work beautifully without ruining the dish.
- Chicken Breasts: You can easily swap in boneless, skinless chicken thighs. They are much more forgiving and stay incredibly juicy, though they may require an extra 2-3 minutes of roasting.
- Broccoli: Brussels sprouts or asparagus make fantastic alternatives. If you want to try another great side, check out our guide on roasted asparagus and carrots.
- Baby Potatoes: Sweet potatoes work wonderfully here. For a similar flavor profile, you can also look at our garlic butter steak and potatoes guide.
- Butter: Ghee or a high-quality olive oil can be used for a dairy-free option, though you will miss that signature rich, buttery flavor.
Let me know if you try this, and especially if you manage to resist eating the crispy potato edges straight off the pan.
Happy roasting!
