Ingredients

  • 1 lb lean ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 1 head iceberg lettuce, chopped
  • 1 cup sharp cheddar cheese, freshly grated
  • 2 roma tomatoes, diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup canned sweet corn, drained
  • 1 bag (9.75 oz) Nacho Cheese Doritos, slightly crushed
  • 1 cup Catalina dressing
  • 1/2 tsp Diamond Crystal kosher salt

Directions

  1. Brown the ground beef in a large skillet over medium-high heat until fully cooked, about 6 to 8 minutes. Drain any excess grease from the pan.
  2. Stir in the taco seasoning, water, and Diamond Crystal kosher salt. Simmer for 3 to 4 minutes until the liquid reduces and coats the beef, then remove from heat and let cool to room temperature.
  3. In a large serving bowl, combine the chopped iceberg lettuce, freshly grated cheddar cheese, diced tomatoes, black beans, and sweet corn.
  4. Add the cooled ground beef to the salad bowl and toss gently to distribute the ingredients.
  5. Just before serving, add the slightly crushed Nacho Cheese Doritos and drizzle the Catalina dressing over the top. Toss thoroughly and serve immediately.

Notes

  • Salt Conversion: This recipe specifies Diamond Crystal kosher salt. If you are using fine sea salt or standard table salt, reduce the measurement to 1/4 teaspoon to avoid over-salting.
  • Lettuce Science: Iceberg lettuce is highly recommended over delicate greens because its high water content and rigid cell walls withstand the heavy weight of the beef, cheese, and acidic dressing without collapsing.
