- 1.5 lbs boneless, skinless chicken breasts
- 1.5 lbs Yukon Gold potatoes, cut into 1-inch cubes
- 1 packet (1 oz) ranch seasoning mix
- 8 oz cream cheese, cubed and softened
- 1.5 cups sharp cheddar cheese, shredded
- 1/2 cup low-sodium chicken broth
- 1 teaspoon Diamond Crystal kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 1/2 teaspoon garlic powder
- 3 green onions, thinly sliced (for garnish)
Directions
- Place the cubed Yukon Gold potatoes in an even layer at the bottom of your slow cooker.
- Sprinkle the potatoes with the Diamond Crystal kosher salt, black pepper, garlic powder, and half of the ranch seasoning packet.
- Lay the chicken breasts directly on top of the seasoned potatoes in a single layer, then sprinkle the remaining ranch seasoning over the chicken.
- Pour the chicken broth around the sides of the slow cooker, taking care not to wash the seasoning off the chicken.
