  • 75 g Kalamata olives, pitted and halved
  • 1 medium red onion, sliced into wedges

Directions

  1. Place the sliced red onions at the bottom of the slow cooker insert to act as a natural, flavorful trivet for the meat.
  2. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, kosher salt, and black pepper until fully emulsified.
  3. Pat the chicken breasts dry with a paper towel, then arrange them in a single layer directly over the onions.
  4. Pour the lemon-herb mixture evenly over the chicken, ensuring every piece is thoroughly coated.
  5. Cover and cook on LOW for 3.5 to 4 hours, or until the internal temperature reaches 74°C (165°F) on an instant-read thermometer.
  6. During the last 20 minutes of cooking, scatter the crumbled feta cheese and halved Kalamata olives over the chicken, then cover to let the cheese soften.

Notes

  • Salt Conversion: This recipe specifies 6 grams (1 teaspoon) of Diamond Crystal kosher salt. If you are using Morton's kosher salt or fine table salt, cut the volume in half to 3 grams (1/2 teaspoon) to avoid over-salting.
  • Science of Oregano: Oregano contains oil-soluble flavor compounds. Whisking the dried herb directly into the olive oil before cooking helps dissolve and distribute these aromatic compounds far better than sprinkling them dry over the chicken.
  • Brand Warning: Cheap, generic store-brand dried oregano failed my kitchen tests because it tasted like dust. I highly recommend using a high-quality brand like Burlap & Barrel for a vibrant, peppery kick.
  • Workflow Warning: Do not leave this chicken on the "warm" setting for hours after it finishes cooking. The residual heat will continue to cook the lean breast meat, drying it out even if the machine is technically turned down.
  • Storage Behavior: As the chicken sits in the fridge, the lemon juice will continue to cure the meat slightly, making it feel a tad firmer on day two, though the flavor will be incredibly deep.
