  • 1 can (15 oz / 425g) tomato sauce
  • 15 oz (425g) whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 3 cups (340g) shredded low-moisture mozzarella cheese, divided
  • 10 to 12 regular dry lasagna noodles (not oven-ready)
  • Fresh basil leaves, torn (for serving)

Directions

  1. In a large skillet over medium-high heat, cook the ground beef and diced onion until the meat is fully browned, about 6 to 8 minutes. Drain any excess grease.
  2. Stir in the minced garlic, Italian seasoning, kosher salt, and black pepper, cooking for 1 minute until fragrant. Pour in the marinara sauce and tomato sauce, then simmer for 5 minutes so the rich meat sauce clings to the pasta later.
  3. In a medium bowl, stir together the ricotta cheese, grated Parmesan, beaten egg, and 1 cup of the shredded mozzarella until smooth.
  4. Spread 1 cup of the meat sauce at the bottom of a 6-quart slow cooker. Break the dry lasagna noodles as needed to fit, creating a single layer over the sauce.
  5. Spread one-third of the ricotta mixture over the noodles, followed by another cup of meat sauce and a handful of mozzarella. Repeat this layering process two more times (noodles, ricotta, sauce, mozzarella).
  6. Cover and cook on LOW for 3.5 to 4 hours, or until the noodles are tender when pierced with a fork.
  7. Sprinkle the remaining mozzarella cheese over the top during the last 15 minutes of cooking. Cover and let it melt completely before serving.

Notes

  • We highly recommend using Diamond Crystal kosher salt; if you are using fine table salt or Morton's kosher salt, reduce the amount by half (use 1/2 teaspoon instead of 1 teaspoon) to prevent over-salting.
  • Whole milk ricotta is essential here. The higher fat content stabilizes the protein matrix during the long cook time, preventing the cheese from breaking down into a watery, grainy texture.
  • Do not cook this on HIGH. The intense direct heat from the slow cooker's heating element will scorch the bottom layer of sauce long before the middle noodles have a chance to soften.
  • After a day in the fridge, the starch in the noodles will continue to absorb moisture, making the leftovers hold their shape beautifully when sliced—often tasting even better than the day it was made.
