Ingredients

  • 1 cup dill pickle chips, extra crunchy, drained
  • 1/2 cup finely shredded iceberg lettuce
  • 1/4 cup finely diced white onion

Directions

  1. Heat a large cast-iron skillet or griddle over high heat until it is smoking hot. Do not add oil; we need a dry surface for maximum adhesion.
  2. Place a ground beef ball directly onto the hot skillet. Immediately place a flour tortilla on top of the beef.
  3. Using a heavy, flat spatula, press down firmly on the tortilla with your palm until your wrist pops slightly, flattening the beef into a thin, even layer beneath the tortilla. Hold the pressure for 10 seconds.
  4. Season the tortilla-side lightly with Diamond Crystal kosher salt and pepper, then let it cook undisturbed for 2 minutes until the edges of the beef are deeply browned and lacy.
  5. Slide a thin metal spatula completely under the beef crust, flip the entire taco over so the tortilla is now on the griddle, and immediately top the beef with a slice of cheddar cheese.
