  • 50 g granulated sugar (for coating)
  • 1.5 tbsp ground cinnamon (for coating)

Directions

  1. Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cream of tartar, baking soda, and Diamond Crystal kosher salt.
  3. In a stand mixer fitted with the paddle attachment, beat the softened butter and sugar on medium-high speed until light and fluffy, about 3 minutes.
  4. Add the egg and vanilla extract to the butter mixture, beating until fully incorporated and scraping down the sides of the bowl.
  5. Reduce the mixer speed to low and gradually add the dry ingredients, mixing just until the dough comes together.
  6. Scoop the dough into small, tablespoon-sized portions and roll them into smooth balls using your palms.
  7. Roll each ball generously in the cinnamon-sugar mixture until completely coated, then place them 1 inch apart on the prepared baking sheet.
  8. Bake for 8 to 10 minutes until the edges are barely golden and the tops are slightly cracked, then let them cool on the pan for 5 minutes before transferring to a wire rack.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you are using Morton's or fine table salt, cut the volume in half to avoid an overly salty bite.
  • Cream of tartar is non-negotiable here because its acidity breaks down sucrose into glucose and fructose, preventing a hard crystalline structure and keeping these poppers incredibly soft for days.
  • Do not overbake these; they should look slightly underdone and soft in the center when you pull them out, as they will continue to firm up on the hot baking sheet.
