- 150g low-moisture mozzarella cheese, freshly grated
- 50g sharp cheddar cheese, freshly grated
- 30g unsalted butter, melted
- 2 cloves garlic, finely minced
- 1g dried oregano (about 1/2 teaspoon)
Directions
- In a large bowl, whisk together the warm water and instant yeast. Let it sit for 2 minutes until slightly foamy.
- Add the sourdough discard, all-purpose flour, and Diamond Crystal kosher salt. Stir with a wooden spoon until a shaggy dough forms.
- Knead the dough inside the bowl with your hands for about 3 minutes until it forms a smooth, slightly tacky ball.
- Drizzle the olive oil into a 9x13-inch metal baking pan. Place the dough in the pan and turn it to coat in the oil.
- Using the flats of your fingers, gently press and stretch the dough toward the corners of the pan. If it shrinks back, let it rest for 10 minutes, then stretch again.
- Cover the pan with a damp towel and let the dough rise in a warm spot for 45 minutes to an hour, or until puffy. Preheat your oven to 450°F (232°C) during the last 20 minutes of rising.
- In a small bowl, combine the melted butter, minced garlic, and dried oregano. Brush half of this garlic butter over the risen dough.
