Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1.5 tsp Diamond Crystal kosher salt (or 3/4 tsp fine sea salt)
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 2 tbsp olive oil, divided
- 1 cup corn kernels (fresh or frozen)
- 1 can (15 oz) black beans, rinsed and drained
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 large avocado, diced
- 1/2 cup Greek yogurt
- 2 tbsp fresh lime juice
- 1 tsp honey
- 1 clove garlic, minced
Directions
- In a small bowl, combine the chili powder, cumin, garlic powder, smoked paprika, and Diamond Crystal kosher salt. Pat the chicken thighs dry with a paper towel and season them generously on all sides with the spice mixture.
- Heat 1 tablespoon of olive oil in a heavy cast-iron skillet over medium-high heat. Once the oil is shimmering, add the chicken thighs and sear for 5 to 6 minutes per side, or until the internal temperature reaches 165°F. Remove the chicken from the skillet and let it rest on a cutting board.
- In the same skillet, add the remaining tablespoon of olive oil. Toss in the corn kernels and let them cook undisturbed for 2 minutes to get a deep, smoky char. Stir once and cook for another 2 minutes, then remove from the heat.
- In a medium bowl, whisk together the Greek yogurt, fresh lime juice, honey, minced garlic, and a pinch of salt until smooth and fully emulsified.
- Slice the rested chicken thighs into bite-sized pieces. In a large serving bowl, layer the chopped romaine lettuce, black beans, charred corn, cherry tomatoes, diced avocado, and sliced chicken.
- Drizzle the creamy lime dressing over the salad and toss gently to combine just before serving.
Notes
- We highly recommend using Diamond Crystal kosher salt. If you are using standard table salt or fine sea salt, cut the measurement in half (use 3/4 teaspoon instead of 1.5 teaspoons) to avoid over-salting.
- Greek yogurt is used as the dressing base because its lactic acid gently tenderizes the raw garlic while its natural proteins help keep the lime juice and olive oil emulsified without separating.
- When charring the corn in the hot skillet, do not stir it constantly. Let it sit undisturbed for 2 minutes at a time so the natural sugars can caramelize; stirring too much will steam the corn instead of charring it.
- If you are meal prepping, store the dressing separately. The acid in the lime juice will break down the cell walls of the romaine lettuce over 24 hours, turning your crisp greens into a soggy mess.
- I tested this with cheap store-brand canned black beans, and they turned to mush instantly because they were over-processed. Stick to Goya or organic brands that hold their shape.
