Directions

  1. In a large bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, cumin, coriander, smoked paprika, turmeric, cinnamon, Diamond Crystal kosher salt, and black pepper.
  2. Add the sliced chicken thighs to the marinade, tossing until every piece is thoroughly coated. Cover and refrigerate for at least 1 hour, or overnight for the best flavor development.
  3. Heat a large cast-iron skillet over medium-high heat until it is smoking hot. Tap your tongs against your hip, take a breath, and add the chicken in a single, sparse layer—do not crowd the pan.
  4. Let the chicken sear undisturbed for 4 to 5 minutes to develop a deep, golden-brown crust, then flip and cook for another 3 to 4 minutes until cooked through.
  5. Remove the chicken from the skillet and let it rest on a cutting board for 3 minutes before roughly chopping.
  6. Warm the pita breads in a dry skillet for 30 seconds on each side until soft and pliable.
  7. Stuff each pita with a generous handful of the spiced chicken, sliced cucumbers, tomatoes, red onions, and a heavy drizzle of garlic sauce.
