- 6 slices thick-cut bacon, chopped

- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 1 tbsp all-purpose flour
- 4 cups low-sodium chicken broth
- 8 oz block cream cheese, softened at room temperature and cubed
- 1/2 cup heavy cream
- 1.5 cups shredded sharp cheddar cheese, plus more for serving
- 2 green onions, thinly sliced
Directions
- In a large, heavy-bottomed Dutch oven over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to fish out the bacon pieces and transfer them to a paper-towel-lined plate, leaving the bacon fat in the pot.
