Directions

  1. Drain the canned tuna thoroughly. Place it in a fine-mesh strainer and press firmly with a spoon to extract as much liquid as possible.
  2. In a medium bowl, whisk together the Kewpie mayonnaise, sriracha, toasted sesame oil, and Diamond Crystal kosher salt until smooth and emulsified.
  3. Flake the dried tuna into the bowl with the dressing. Use a fork to mix until the tuna is fully coated.
  4. Gently fold in the diced Persian cucumbers, radishes, and sliced green onions.
  5. Divide into bowls and garnish with toasted black sesame seeds before serving.

Notes

  • Salt Conversion: I highly recommend using Diamond Crystal kosher salt. If you are using fine table salt or Morton's, cut the volume in half to 1/4 teaspoon to avoid over-salting.
  • The Kewpie Difference: Kewpie mayonnaise is essential here because it is made exclusively with egg yolks rather than whole eggs, creating a tighter emulsion and a richer, more savory flavor profile due to natural MSG.
  • Texture Warning: Do not overwork the tuna when mixing it with the dressing. Over-mashing will break down the fish fibers into a baby-food-like paste instead of keeping those desirable, flaky pockets of texture.
  • Storage Behavior: After 24 hours in the fridge, the vegetables will naturally release some water. Give it a quick, vigorous stir with a fork to re-emulsify the dressing before eating.
