  • Cold cream cheese is essential here because its high fat content prevents it from melting completely into the fruit, leaving distinct, velvety cheesecake pockets after baking.
  • Do not stir the layers! Stirring will ruin the distinct textures, turning the cake into a dense, gummy paste instead of a light, cobbler-like topping.
  • After a day in the fridge, the crust will soften slightly as it absorbs moisture from the strawberries, making it taste remarkably like a traditional strawberry cheesecake poke cake.
