Ingredients

  • 1 lb (454g) fresh strawberries, hulled and sliced
  • 1/2 cup (100g) granulated sugar (for the glaze)
  • 1 tbsp cornstarch
  • 1/2 cup (120ml) cold water
  • 1/4 tsp Diamond Crystal kosher salt

Directions

  1. In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/3 cup of granulated sugar until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of a 9x13-inch baking dish using the flat bottom of a measuring cup, then freeze for 10 minutes to set.
  3. In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. In a separate bowl, whip the cold heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until fully incorporated.
  5. Spread the cream mixture evenly over the chilled graham cracker crust and place the dish in the refrigerator.
  6. In a small saucepan, whisk together the 1/2 cup of granulated sugar, cornstarch, cold water, and Diamond Crystal kosher salt until smooth.
  7. Add 1 cup of the sliced strawberries to the saucepan and bring to a boil over medium heat, mashing the berries slightly with a wooden spoon as they cook.
  8. Simmer for 2 to 3 minutes, stirring constantly, until the mixture becomes thick, glossy, and translucent.
  9. Remove from heat, stir in the remaining sliced strawberries, and let the glaze cool completely to room temperature.
  10. Pour the cooled strawberry mixture over the cream layer, spread gently, and refrigerate for at least 4 hours (preferably overnight) before slicing.

Notes

  • Brand Recommendation: For the cream cheese, I highly recommend using Philadelphia brand brick cream cheese. If you are substituting salt, use 1/4 teaspoon of Diamond Crystal kosher salt, or convert to 1/8 teaspoon of standard fine table salt.
  • Science-Backed Rationale: Heavy whipping cream must be whipped to stiff peaks to build a stable protein matrix. This matrix traps air and fat globules, preventing the cream layer from collapsing under the weight of the strawberry glaze.
