  • 1.5 cups heavy whipping cream (for topping)
  • 3 tbsp powdered sugar
  • 1.5 cups fresh strawberries, sliced

Directions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking pan.
  2. Whisk the flour, baking powder, and salt in a medium bowl until combined.
  3. Whip the egg yolks with 3/4 cup of granulated sugar in a large bowl using a hand mixer until pale and thick. Stir in the whole milk and vanilla extract.
  4. Beat the egg whites in a separate clean bowl until soft peaks form, then gradually add the remaining 1/4 cup of sugar, beating until stiff peaks hold.
  5. Fold the flour mixture into the egg yolk mixture gently, then fold in the whipped egg whites in three batches until just combined.
  6. Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Whisk the sweetened condensed milk, evaporated milk, heavy cream, and strawberry puree together in a bowl.
  8. Poke holes all over the cooled cake with a fork, then slowly pour the milk mixture over the top, letting it soak in completely.
  9. Chill the cake in the refrigerator for at least 4 hours, or preferably overnight.
  10. Whip the heavy cream, powdered sugar, and vanilla until stiff peaks form, spread over the cake, and garnish with sliced strawberries before serving.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you are using Morton's, cut the volume in half (use 1/8 tsp instead of 1/4 tsp) to avoid an overly salty batter.
  • The evaporated milk is crucial because its reduced water content prevents the cake from becoming soggy, while the high protein concentration stabilizes the milk soak.
  • Do not over-bake the sponge cake; because it contains very little fat, even two extra minutes in the oven will dry out the edges and prevent them from absorbing the milk properly.
