Street Corn Chicken Rice Bowl
A vibrant, creamy, and smoky Street Corn Chicken Rice Bowl featuring juicy spiced chicken, charred sweet corn, and a zesty cotija lime crema.
- Skillet Charring Technique: Searing the corn in a dry, hot skillet mimics the smoky flavor of an open-flame grill.
- Acid-Balanced Crema: Greek yogurt and mayonnaise combine to create a rich sauce that clings to the rice without feeling heavy.
- High-Heat Chicken Sear: Cooking the spiced chicken rapidly locks in moisture, ensuring tender bites every single time.
I still remember the humid Tuesday evening I tried to eat elote while walking down a crowded sidewalk, only to have a glob of chili-spiked crema slide off the cob and land directly on my favorite suede boots.
It was messy, slightly embarrassing, and absolutely perfect.
But translating those street-cart flavors into a structured weeknight meal usually fails because chicken breast dries out in seconds, while frozen corn turns into a soggy, sweet puddle instead of getting that gorgeous, smoky char.
The fix is pure physics.
We sear the corn in a screaming-hot cast-iron skillet without touching it for the first three minutes to let the sugars caramelize, while a quick lime marinade breaks down the chicken's protein matrix to keep it incredibly juicy.
Trust me, this is hands-down the easiest way to get your street-food fix without ruining your footwear.

Ingredients
- 1.5 lbs chicken breasts, cut into bite-sized cubes
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- 0.5 tsp ground cumin
- 1 tsp Diamond Crystal kosher salt
- 1 tbsp fresh lime juice
- 2 cups sweet corn (fresh or thawed frozen)
- 1 tbsp unsalted butter
- 1 tbsp mayonnaise
- 1 tbsp plain Greek yogurt
- 0.25 cup cotija cheese, crumbled
- 0.25 cup fresh cilantro, finely chopped
- 0.5 tsp chili powder (for the corn)
- 3 cups cooked white or brown rice
- 1 avocado, sliced
- Lime wedges for serving
Directions
- In a medium bowl, toss the cubed chicken with olive oil, chili powder, smoked paprika, cumin, kosher salt, and lime juice. Let it sit for 10 minutes at room temperature to marinate.
- Heat a large cast-iron skillet over high heat. Add the corn in a single layer and let it sear undisturbed for 3 minutes until charred spots form, then stir and cook for another 2 minutes.
- Transfer the charred corn to a bowl. Stir in the butter, mayonnaise, Greek yogurt, cotija cheese, cilantro, and chili powder until creamy and well combined.
- In the same skillet, add a splash of oil if dry, and sear the chicken over medium-high heat for 5 to 6 minutes, tossing occasionally, until cooked through and a deep golden crust forms.
- Assemble the bowls by layering a scoop of cooked rice, a generous portion of spiced chicken, a scoop of the street corn mixture, and sliced avocado. Serve with extra lime wedges.
Notes
- I highly recommend using Diamond Crystal Kosher Salt. If you are using fine table salt or Morton's, cut the measurement in half (use 0.5 tsp) to avoid over-salting your chicken.
- Mayonnaise is crucial for the corn dressing because its oil-soluble flavor compounds carry the smoky chili and sweet corn flavors across your palate far better than yogurt alone.
- Do not crowd the skillet when searing the chicken. If the pieces are piled on top of each other, they will steam instead of sear, ruining that beautiful Maillard reaction crust.
- The cotija crema on the corn will thin out slightly after a day in the fridge as the corn releases moisture. Give it a vigorous stir before reheating.
Serving Suggestions
To elevate this bowl into a true feast, pair it with vibrant sides that cut through the creamy richness of the street corn and add a fresh crunch to your plate.
- A side of crispy tortilla chips and fresh salsa verde.
- Pair it with our refreshing Mexican Street Corn Salad for an extra dose of sweet, charred goodness.
- A scoop of black beans seasoned with garlic and cumin.
- Serve alongside a crisp, cold beverage or a zesty Spicy Jalapeño Coleslaw to add a bright, crunchy contrast.
- A base of seasoned rice, similar to our flavorful Taco Rice Bowl, to soak up all the delicious juices.
Storage and Reheating
Store the components separately.
Keep the cooked chicken and rice in airtight containers in the fridge for up to four days. The street corn mixture is best kept in its own container to preserve its creamy texture.
Reheat the chicken and rice in the microwave with a damp paper towel draped over the top to lock in moisture.
Eat the corn cold or slightly warm. Heating mayonnaise-based sauces too aggressively will cause them to split into an oily mess, which is absolutely tragic.
Ingredient Substitutes
If you don't have everything in your pantry, don't panic. Here are some easy swaps that work beautifully without sacrificing flavor.
- Cotija Cheese: Substitute with crumbled feta cheese, which offers a similar salty, dry bite.
- Chicken Breasts: Use boneless, skinless chicken thighs for an even juicier option, similar to our Honey Lime Chicken Avocado Rice.
- Greek Yogurt: Sour cream can easily replace the Greek yogurt in the corn dressing.
- Rice Base: Swap the white rice for quinoa or cauliflower rice for a lighter, low-carb alternative.
This bowl has quickly become my absolute favorite way to rescue boring weeknight dinners. It is fast, incredibly satisfying, and brings all the joy of street food straight to your kitchen table without any of the sidewalk mess.
