- 2 large English cucumbers, sliced into half-moons
- 1 tablespoon Diamond Crystal kosher salt (for purging)
- 2 cups sweet corn kernels (fresh or frozen)

- 1/4 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1 clove garlic, finely grated
- Zest and juice of 1 medium lime
- 1/2 teaspoon chili powder
- 1/2 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
Directions
- Toss the sliced cucumbers with the kosher salt in a colander and let them drain for 15 minutes to draw out excess water.
- Pat the drained cucumbers completely dry with paper towels, pressing gently to remove remaining moisture.
- Heat the oil in a cast-iron skillet over high heat until smoking, then add the corn and cook undisturbed for 3 minutes to get a deep, smoky char.
- Whisk the mayonnaise, sour cream, grated garlic, lime zest, lime juice, and chili powder in a large bowl until smooth.
- Add the charred corn, dried cucumbers, crumbled cotija cheese, and chopped cilantro to the bowl, then fold gently until everything is coated.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have Morton's, cut the volume in half (use 1/2 tablespoon) to avoid an over-salted salad.
- The science behind purging cucumbers relies on osmosis, where salt draws water out of the plant cells, leaving the cell walls tightly packed and incredibly crisp.
- Do not skip cooling the charred corn completely before mixing; adding hot corn directly to the dairy base will break the emulsion of the mayonnaise and make it greasy.
- After a day in the fridge, the cotija cheese will absorb some of the lime juice, making the salad taste even more flavorful, though it will lose a bit of its initial crunch.
