- 2 large chicken breasts, sliced into bite-sized pieces
- 2 medium zucchini, sliced into half-moons
- 250g cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- Fresh basil leaves, for garnish
Directions
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken pieces with half of the salt and pepper, then sear until golden brown and cooked through, about 5-6 minutes. Transfer chicken to a plate.
- Add the remaining olive oil to the same skillet. Toss in the zucchini slices and cook without moving them for 2 minutes to get a nice sear, then stir and cook for another 2 minutes until tender-crisp.
