Tender Chicken Pillows
These tender chicken pillows are wrapped in flaky crescent dough, baked to golden perfection, and smothered in a rich, velvety Parmesan cream sauce.
- Fine-shredded chicken binds perfectly with cream cheese, preventing steam pockets from bursting the delicate pastry.
- Room-temperature cream cheese mixes smoothly without lumps, ensuring even heat distribution during baking.
- The Parmesan cream sauce uses freshly grated cheese to prevent a grainy texture, resulting in a silky-smooth finish.
My first attempt at making chicken pillows ended with a smoke detector serenade.
I had stuffed the crescent dough so full of filling that the seams split wide open in the oven, spilling precious cream cheese everywhere.
The issue, as I later realized after testing this with four different brands of dough, comes down to moisture control and gluten elasticity. When you trap cold, high-moisture cream cheese inside a delicate pastry wrapper, the steam expands rapidly before the dough has time to set its protein matrix.
Pinch the seams with your thumbs until your knuckles turn white.
By using room-temperature cream cheese and shredding the chicken ultra-fine, you create a cohesive paste that stays put. We then smother these golden, flaky pockets in a velvety, garlic-infused cream sauce similar to our favorite creamy garlic butter chicken that clings to the pastry beautifully. Trust me on this one, it is hands down the easiest way to turn leftover chicken into a dinner that feels incredibly fancy.
Think about this in terms of physics: the pastry needs to crisp up on the outside at the exact same rate the interior filling reaches a safe, molten temperature. If the filling is too cold, the pastry burns before the cheese melts; if it is too hot, it liquefies and escapes.

Ingredients
- 2 cups cooked chicken, finely shredded
- 4 oz cream cheese, softened to room temperature
- 2 tbsp green onions, finely chopped
- 1/4 tsp Diamond Crystal kosher salt
- 1/8 tsp freshly cracked black pepper
- 1 can (8 oz) refrigerated crescent rolls
- 1 tbsp unsalted butter, melted
- 1/2 cup crushed seasoned stuffing mix or breadcrumbs
- 2 tbsp unsalted butter (for the sauce)
- 2 tbsp all-purpose flour
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/2 tsp garlic powder
Directions
- Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper to prevent sticking.
- In a medium bowl, combine the shredded chicken, softened cream cheese, green onions, kosher salt, and black pepper. Stir vigorously until the mixture forms a smooth, cohesive paste.
- Unroll the crescent roll dough and separate it into four rectangles. Gently press the diagonal perforated seams of each rectangle together with your fingers to seal them.
- Spoon a quarter of the chicken mixture onto the center of each dough rectangle. Pull the corners of the dough up over the filling and pinch all the seams tightly together to form a secure pouch.
- Brush the tops of each dough pillow with melted butter, then roll or sprinkle them with the crushed stuffing crumbs until evenly coated. Place them seam-side down on the prepared baking sheet.
- Bake for 12 to 15 minutes, or until the pastry is puffed and deep golden brown.
- While the pillows are baking, prepare the sauce. Melt 2 tablespoons of butter in a small saucepan over medium heat, then whisk in the flour and cook for 1 minute to remove the raw flour taste.
- Gradually whisk in the chicken broth and heavy cream, bringing the mixture to a gentle simmer. Cook for 2 to 3 minutes until thickened, then remove from the heat and stir in the Parmesan cheese and garlic powder until completely smooth. Pour over the warm chicken pillows and serve immediately.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt, cut the volume in half to avoid over-salting.
- Freshly grated Parmesan cheese is crucial here because pre-shredded packaged cheese is coated in cellulose, which prevents melting and results in a grainy sauce.
- Keep a close eye on your roux when whisking the flour and butter; if it turns dark brown, it will overpower the delicate cream sauce, so keep the heat strictly at medium.
- The baked crescent pastry will lose its crispness after a day in the fridge, absorbing moisture from the filling, so store the sauce separately to prevent soggy pillows.
Serving Suggestions
Pair these rich, flaky pillows with light, vibrant sides to balance out the decadent cream sauce and complete your meal.
- A crisp cucumber salad with a light vinaigrette to cut through the richness of the cream cheese.
- Roasted asparagus spears drizzled with fresh lemon juice and a pinch of flaky sea salt.
- A simple green salad tossed with a tangy vinaigrette.
- Steamed broccoli florets to soak up any extra Parmesan sauce.
Storage and Reheating
Leftovers happen, but they require a bit of care.
Store any leftover chicken pillows in an airtight container in the refrigerator for up to three days, keeping the sauce in a separate jar.
To revive that flaky, fresh-baked texture, avoid the microwave at all costs because it turns the pastry into a rubbery mess. Instead, pop the pillows onto a baking sheet and heat them in a 350°F oven for about 10 minutes until warmed through.
Gently warm the sauce on the stovetop over low heat, whisking in a splash of milk to restore its silky consistency.
Ingredient Substitutes
If you find yourself missing an ingredient, these simple swaps will keep dinner on track.
- Crescent Dough: If you don't have crescent rolls, puff pastry sheets work beautifully, though you may need to bake them a few minutes longer.
- Cooked Chicken: Leftover rotisserie chicken is perfect, but canned chicken (drained well) or even leftover turkey works in a pinch.
- Parmesan Cheese: Asiago or Pecorino Romano can be used instead of Parmesan for a slightly sharper flavor profile.
Let me know if you try these, and especially if you manage to resist eating the filling straight out of the bowl before baking!
