Ingredients

  • Maldon sea salt flakes, for topping

Directions

  1. Line an 8x8-inch metal baking pan with parchment paper, leaving an overhang on the sides for easy removal. Avoid glass pans as they retain too much thermal mass and can make the bars sweat.
  2. In a large, heavy-bottomed pot, melt the 6 tablespoons of unsalted butter over low heat.
  3. Add 12 ounces of the mini marshmallows and the kosher salt. Stir constantly with a silicone spatula until completely melted and smooth, then immediately remove the pot from the heat.
  4. Stir in the vanilla bean paste. Gently fold in the toasted rice cereal and the remaining 4 ounces of mini marshmallows until the cereal is evenly coated and the whole marshmallows are slightly softened but not fully melted.
