- 1 lb lean ground turkey (93% lean is best)
- 1 tsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1/2 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 3 cups chopped Lacinato kale, tough stems removed
- 1/2 cup freshly grated Parmesan cheese
Directions
- Heat the olive oil in a large, heavy-bottomed skillet over medium-high heat.
- Add the ground turkey to the skillet, breaking the meat apart with a wooden spoon, and cook until browned and no longer pink, about 6 to 8 minutes. Season with the kosher salt and black pepper.
