Sweet Potato Sloppy Joes
A comforting, Whole30-compliant sweet potato sloppy joes recipe featuring savory ground beef piled onto tender roasted sweet potato jackets.
- Sweet potatoes provide a natural, caramelized sweetness that replaces the brown sugar typically found in traditional sloppy joe sauce.
- Searing the ground beef in a hot cast-iron skillet triggers the Maillard reaction, creating deep, savory flavor compounds that cling to the meat.
- A splash of apple cider vinegar cuts through the rich beef fat, balancing the acidity and mimicking the tang of classic ketchup.
I still remember the night my cheap non-stick skillet finally died.
I was trying to make a quick weeknight dinner, but instead, I ended up scrubbing the charred tomato paste until my forearms ached.
It got annoying fast.
The problem with most Whole30-friendly ground beef recipes is that without the sugar-laden ketchup and processed buns of our childhood, the meat mixture dries out and tastes flat. On a molecular level, without sugar to retain moisture and starch to bind the fat, the beef proteins tighten up and squeeze out their natural juices during cooking.
I tested this with three different store-brand tomato pastes, and they all failed because they lacked the concentrated pectin needed to bind the sauce naturally.
My simple fix is to roast sweet potato halves until they are caramelized and jammy, creating a natural, sweet vessel that perfectly balances the savory, tangy beef.
Trust me on this one.

Ingredients
- 2 large sweet potatoes, halved lengthwise
- 1 tbsp olive oil
- 1 lb lean ground beef (or ground turkey, see our Ground Turkey and Zucchini Skillet for prep tips)
- 1/2 yellow onion, finely diced
- 1/2 green bell pepper, finely diced
- 2 cloves garlic, minced
- 1 can (8 oz) tomato sauce
- 2 tbsp tomato paste
- 1 tbsp apple cider vinegar
- 1 tbsp coconut aminos
- 1 tsp yellow mustard
- 1 tsp smoked paprika
- 1/2 tsp Diamond Crystal kosher salt (use 1/4 tsp if using fine table salt)
- 1/4 tsp black pepper
Directions
- Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Brush the cut sides of the sweet potatoes with olive oil, place them cut-side down on the baking sheet, and roast for 30 to 35 minutes until tender and caramelized. (For a different take on roasted tubers, check out our crispy Sweet Potato Rounds).
- While the potatoes roast, heat a large cast-iron skillet over medium-high heat and add the ground beef, breaking it up with a wooden spoon.
- Cook the beef until browned, then fish out any excess grease from the pan, leaving about a tablespoon for flavor.
- Add the diced onion and bell pepper to the skillet, sautéing for 5 minutes until soft and translucent.
- Stir in the minced garlic, tomato sauce, tomato paste, apple cider vinegar, coconut aminos, yellow mustard, smoked paprika, kosher salt, and black pepper.
- Reduce the heat to low and simmer the beef mixture for 10 minutes, allowing the sauce to thicken and cling to the meat.
- Flip the roasted sweet potatoes cut-side up, gently mash the flesh with a fork to create a well, and scoop up generous portions of the beef mixture to pile on top.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half to avoid over-salting.
- Tomato paste contains oil-soluble flavor compounds that must be sautéed directly in the pan's fat for a minute before adding liquids to unlock their full aromatic potential.
- Do not let the skillet run dry during the simmer phase; if the sauce thickens too quickly, stir in a tablespoon of water to prevent the bottom from scorching.
- The beef mixture actually tastes better the next day as the flavors meld in the fridge, though the sweet potatoes may lose their crispy edges and become slightly softer.
Serving Suggestions
These loaded sweet potatoes are incredibly filling on their own, but you can easily round out the meal with a few fresh, vibrant sides to balance the rich, savory beef mixture.
- Pair these sloppy joes with a crisp side like our Fresh Corn Salad to balance the warm, savory beef.
- Top with sliced jalapeños or a drizzle of hot honey for a spicy kick, similar to the flavors in our Ground Beef Hot Honey Bowl.
- Serve alongside a simple green salad tossed with a light vinaigrette.
- Garnish with freshly chopped cilantro or green onions for a pop of color and freshness.
Storage and Reheating
Store the roasted sweet potatoes and the beef mixture in separate airtight containers in the refrigerator for up to 4 days.
This prevents soggy potatoes.
To reheat, warm the beef in a small saucepan over medium-low heat, adding a splash of water if it seems too thick.
Pop the sweet potatoes into a 350°F (177°C) oven or air fryer for 5-8 minutes to restore their texture.
Ingredient Substitutes
If you need to adapt this recipe based on what is currently in your pantry, here are a few simple swaps that work beautifully:
- Ground Beef: You can easily swap this for ground turkey or chicken; if you prefer pork, it works beautifully too.
- Coconut Aminos: If you aren't strictly Whole30, soy sauce or tamari can be used in a 1:1 ratio.
- Sweet Potatoes: Yellow Yukon Gold potatoes or even roasted spaghetti squash make excellent low-carb vessels.
- Apple Cider Vinegar: White wine vinegar or lemon juice will provide a similar bright acidity to balance the rich sauce.
This recipe has become a staple in my kitchen because it delivers all the messy, nostalgic joy of a childhood favorite without any of the post-dinner slump. I hope it brings a little warmth to your table tonight!
