These crispy Air Fryer Hot Chicken Ham and Cheese Wraps combine spicy, tender chicken, savory ham, and melty cheese in a perfectly toasted tortilla.

Air Fryer Hot Chicken Ham and Cheese Wraps
Why This Recipe Works:
  • Steaming the tortillas first gelatinizes the starches, making them incredibly pliable and preventing ugly tears.
  • Air frying at 375°F creates a rapid crust on the tortilla while melting the cheese perfectly without drying out the pre-cooked chicken.
  • Brushing with a touch of oil-soluble hot sauce and butter ensures a deep, golden crunch and even heat distribution.

I still remember the Tuesday afternoon I tried to roll a wrap with cold, stiff flour tortillas straight from the fridge, only to watch the seam split wide open and dump spicy chicken all over my clean jeans.

It was a total mess.

Most quick wraps fail because cold tortillas lack the elasticity needed to stretch around bulky fillings like sliced ham and chicken. Think about this in terms of physics: cold gluten is brittle gluten, and when you force it to bend without warming it first, the protein matrix simply snaps under the tension.

The simple fix is a quick ten-second steam in the microwave under a damp paper towel.

This makes the starches gelatinize, giving you a beautifully pliable wrapper that easily hugs our spicy, cheese-loaded filling without a single tear. It is hands down the easiest way to ensure your wraps stay completely sealed while they crisp up in the air fryer basket.

Ingredients

  • 4 large flour tortillas (burrito size)
  • 2 cups cooked chicken breast, shredded (leftovers from our Crispy Malibu Chicken work beautifully)
  • 2 tablespoons hot sauce (such as Frank's RedHot)
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 8 slices deli ham
  • 1.5 cups Monterey Jack cheese, shredded
  • 1 tablespoon olive oil (for brushing)

Directions

  1. In a medium bowl, toss the shredded cooked chicken with the hot sauce, melted butter, and Diamond Crystal kosher salt until the chicken is fully coated.
  2. Dampen a clean paper towel, wrap the flour tortillas in it, and microwave for 15 seconds until they are warm, soft, and highly pliable.
  3. Lay one warmed tortilla flat on a clean work surface and place two slices of deli ham right in the center.
  4. Top the ham with a quarter of the spicy chicken mixture, then sprinkle a generous handful of shredded Monterey Jack cheese over the top.
  5. Fold the left and right sides of the tortilla inward over the filling, then roll tightly from the bottom up to seal the wrap completely. Repeat this process for the remaining three wraps.
  6. Lightly brush the outside of each assembled wrap with olive oil to promote even browning and a shatteringly crisp texture.
  7. Place the wraps seam-side down in your air fryer basket, ensuring they do not touch so the hot air can circulate freely.
  8. Air fry at 375°F (190°C) for 6 to 8 minutes, flipping them over halfway through, until the exterior is deeply golden brown and crispy.

Notes

  • We highly recommend Diamond Crystal kosher salt; if you are using Morton's or fine table salt, cut the volume in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an over-salted filling.
  • The addition of melted butter to the hot sauce is crucial because the fat coats the chicken proteins, locking in moisture and preventing the meat from drying out under the intense, circulating heat of the air fryer.
  • Keep a close eye on the wraps during the last two minutes of air frying; flour tortillas can go from perfectly golden to charred and bitter very quickly if your air fryer runs hot.
  • While these are best served fresh, leftovers stored in the fridge will lose their crunch as the tortilla absorbs moisture from the ham; reheat them in the air fryer at 350°F for 4 minutes to restore that crispy texture.

Serving Suggestions

These wraps are incredibly satisfying on their own, but pairing them with the right sides makes for a complete, restaurant-quality meal. Here are our favorite ways to serve them:

  • Serve alongside crispy Garlic Parmesan Potato Wedges for a classic pub-style dinner.
  • Pair with a cool, creamy dipping sauce like ranch or blue cheese dressing to balance the spicy kick.
  • Add a fresh, crunchy side like a simple green salad or a zesty coleslaw.
  • Serve with pickle spears on the side—the acidity cuts through the rich cheese and savory ham beautifully, much like a classic Dill Pickle Grilled Cheese.

Storage and Reheating

If you have leftovers, let the wraps cool completely on a wire rack before wrapping them tightly in foil. This prevents steam from trapping inside, which turns your beautifully crispy wraps into a sad, soggy mess before they even hit the fridge.

They will keep in the refrigerator for up to three days.

When you are ready to eat, please resist the urge to use the microwave. Microwaving will heat the water molecules in the tortilla rapidly, making it incredibly chewy and leather-like. Instead, pop them back into the air fryer at 350°F for about 4 to 5 minutes.

This gently melts the cheese again while crisping the outer shell back to its original glory.

Ingredient Substitutes

Don't have everything on hand? No worries. Here are some easy swaps that work beautifully without ruining the recipe:

  1. The Chicken: If you don't have cooked chicken breast, leftover turkey or even shredded rotisserie chicken works perfectly.
  2. The Ham: Sliced turkey bacon or prosciutto makes an excellent substitute for the deli ham, adding a lovely smoky flavor.
  3. The Cheese: Swap the Monterey Jack for cheddar, provolone, or mozzarella depending on what you have in your cheese drawer.
  4. The Tortillas: Gluten-free wraps can be used, but be extra careful to steam them well as they tend to tear much easier than flour tortillas.

I hope these crispy, spicy pockets bring a little joy to your busy weeknights. Tap your tongs against your hip, get that air fryer preheated, and let me know how they turn out in the comments below!
