I tested this with four different baking methods, and wrapping cold, wet chicken salad directly in raw dough failed every single test because the trapped moisture completely dissolved the pastry's internal structure, leaving me with a gummy, sad mess.

The simple fix is using pre-cooked, shredded chicken breast layered with dry, crispy bacon. No fancy equipment is needed.

Ingredients

  • 2 large bakery croissants
  • 1 cup cooked chicken breast, shredded
  • 4 slices thick-cut bacon, cooked until crispy
  • 4 slices provolone cheese
  • 2 tbsp mayonnaise
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 tsp freshly cracked black pepper

Directions

  1. Preheat your oven or toaster oven to 375°F (190°C).
  2. Slice the croissants horizontally using a sharp serrated knife, leaving a small hinge at the back.
  3. Spread a thin layer of mayonnaise on the bottom half of each croissant to act as a fat barrier.
  4. Layer two slices of cheese, the shredded chicken, and the crispy bacon slices inside each croissant.
  5. Press down gently with the palm of your hand to compress the layers slightly, then place them on a baking sheet.
  6. Bake for 5 to 7 minutes until the cheese is completely melted and the pastry is fragrant and crisp.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you are using fine table salt like Morton's, cut the volume in half (use 1/4 teaspoon instead of 1/2 teaspoon).
  • The mayonnaise acts as a hydrophobic barrier. The fat in the emulsion prevents the water molecules from the chicken from migrating into the starch matrix of the croissant, keeping it crisp.
  • Keep a close eye on the oven during the last two minutes of baking. Croissants contain a high amount of butter, which can go from beautifully toasted to scorched in a matter of seconds.
  • Once assembled and baked, these do not store well in the fridge as the pastry will absorb ambient humidity and lose its crispness. If you must make them ahead, store the chicken, bacon, and croissants separately and assemble right before heating.

Storage and Reheating

If you happen to have leftovers, wrap the unheated sandwiches tightly in aluminum foil and store them in the refrigerator for up to two days.

Do not use the microwave to reheat them. The microwave will turn your beautiful croissant into a sad, rubbery leather.

Instead, place the sandwich back into a 350°F (175°C) oven or air fryer for 4 to 5 minutes. This revives the butter in the laminated layers, restoring that freshly-baked crunch.

Here are a few easy swaps if you don't have everything on hand in your pantry.

  1. Chicken: Swap the shredded chicken breast for leftover turkey or even a warm Brie and Turkey Ciabatta Sandwich filling style.
