Ingredients

  • 4 thick slices sourdough bread
  • 1.5 cups cooked chicken breast, shredded
  • 1 ripe avocado, sliced
  • 4 slices provolone or Monterey Jack cheese
  • 2 tbsp mayonnaise
  • 2 tbsp unsalted butter, softened
  • 1/2 tsp Diamond Crystal kosher salt
  • 1 tsp fresh lime juice

Directions

  1. Spread the softened butter evenly on one side of each bread slice. This will be the outside of your sandwich.
  2. Flip the slices over and spread a thin layer of mayonnaise on the inside of each slice to add flavor and create an extra moisture barrier.
  3. Place one slice of cheese on the mayonnaise-side of two bread slices.
  4. In a small bowl, gently toss the sliced avocado with the fresh lime juice and Diamond Crystal kosher salt.
  5. Layer the shredded chicken evenly over the cheese, followed by the seasoned avocado slices.
  6. Top with the remaining cheese slices and the other pieces of bread, buttered side facing out.
  7. Heat a cast-iron skillet over medium-low heat. Place the sandwiches in the pan and press down firmly with a heavy spatula or a second heavy skillet.
  8. Cook for 4 to 5 minutes per side, or until the bread is deeply golden brown and the cheese is completely melted. Slice and serve immediately.

  • I highly recommend using Diamond Crystal kosher salt; if you are using Morton's, cut the volume by half to avoid over-salting your avocado.

  • Do not crank up the heat to rush the process; cooking over medium-low ensures the cheese melts completely before the bread burns.
