These easy, no-bake coconut chocolate balls are rich, fudgy, and topped with a crunchy toasted almond for the ultimate bite-sized treat.

Bite-sized coconut chocolate balls topped with almonds
Why This Recipe Works:
  • Unsweetened shredded coconut provides the perfect structural base without adding excess moisture or cloying sweetness.
  • A pinch of Diamond Crystal kosher salt balances the rich cocoa and enhances the natural nuttiness of the toasted almonds.
  • Chilling the coconut mixture before rolling ensures the balls hold their shape perfectly when dipped in melted chocolate.

I still remember the humid July afternoon when my sister and I tried to make homemade candy bars, only to end up with a melted, sticky puddle of chocolate all over our knuckles and the kitchen counter.

It was a disaster.

Most no-bake treats fail because the fat-to-dry-ratio is off, leaving you with a crumbly mess.

When you mix shredded coconut with liquid sweeteners, the coconut's natural moisture can prevent the chocolate from adhering properly, causing the layers to separate on a molecular level. If you use cheap, sweetened coconut flakes, the excess sugar draws out even more water through osmosis, which completely ruins the structural integrity of the bite.

The simple fix is using unsweetened, finely shredded coconut bound with a touch of coconut oil.

If you love bite-sized treats like our Sugar Plum Bites, you will find that these coconut balls are just as easy to whip up.

Trust me on this one.

Ingredients

  • 1.5 cups unsweetened shredded coconut
  • 3 tbsp pure maple syrup
  • 2 tbsp melted coconut oil
  • 1/2 tsp vanilla extract
  • 1/4 tsp Diamond Crystal kosher salt
  • 1 cup high-quality dark chocolate chips
  • 1 tsp refined coconut oil
  • 12 whole raw almonds, toasted

Directions

  1. Line a small baking sheet with parchment paper. In a food processor, pulse the unsweetened shredded coconut, maple syrup, melted coconut oil, vanilla extract, and kosher salt until the mixture is finely ground and holds together when squeezed.
  2. Use a small cookie scoop to portion the coconut mixture, then roll it between your palms until your hands are slightly warm and the balls are smooth and compact. Place them on the prepared baking sheet.
  3. Press one toasted almond firmly into the top of each coconut ball, ensuring it is securely embedded. Transfer the baking sheet to the freezer for 10 minutes to firm up.
  4. While the balls freeze, melt the dark chocolate chips and refined coconut oil together in a heatproof bowl in 30-second bursts in the microwave, stirring until completely smooth.
  5. Fish the chilled coconut balls out of the freezer. Using a fork, dip each ball into the melted chocolate, letting the excess drip back into the bowl, then return them to the parchment paper.
  6. Chill the finished chocolate balls in the refrigerator for 15 minutes until the chocolate shell is completely set and snaps when bitten.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half (use 1/8 teaspoon instead of 1/4 teaspoon) to avoid an overly salty bite.
  • Refined coconut oil is added to the dark chocolate because its medium-chain triglycerides help thin the chocolate matrix, creating a glossy, pourable glaze that sets with a satisfying snap.
  • When melting the dark chocolate, never let even a single drop of water touch the bowl, or the chocolate will instantly seize into a gritty, unworkable paste.
  • After a day in the fridge, the coconut interior actually becomes fudgier as the starch gelatinization stabilizes and the flavors meld together.

Serving Suggestions

These bite-sized treats are incredibly versatile and make the perfect addition to any dessert spread or afternoon coffee break.

  • Arrange them on a vintage ceramic platter alongside our No Bake Crispy Peanut Butter Balls for an effortless, no-bake dessert spread.
  • Serve them chilled next to a hot cup of espresso to let the dark chocolate slowly melt on your tongue.
  • Add them to a festive holiday cookie tray alongside our colorful Patriotic Oreo Balls for a beautiful contrast of textures.
  • Pack them into small mason jars with a ribbon as a thoughtful, homemade gift for the coconut lovers in your life.

Storage and Reheating

Keep them cold.

Because these bites rely on coconut oil to maintain their structure, leaving them out on a warm kitchen counter for too long will cause them to soften and lose their satisfying bite.

Store them in an airtight container in the refrigerator for up to two weeks.

For longer storage, you can freeze them on a baking sheet before transferring them to a freezer-safe bag, where they will happily keep for up to three months. When you are ready to eat, simply enjoy them straight from the freezer for an extra-firm, ice-cream-like texture that is absolutely perfect on a hot day.

Do not microwave or reheat these, as the delicate chocolate shell will instantly melt into a puddle.

Ingredient Substitutes

If you need to adapt this recipe based on what is currently in your pantry, here are a few simple swaps that work beautifully:

  1. Almonds: Swap the whole almonds for toasted hazelnuts or pecans if you prefer a different nutty crunch on top.
  2. Maple Syrup: You can use honey or brown rice syrup instead of maple syrup, though honey will add a more distinct floral flavor.
  3. Dark Chocolate: If dark chocolate is too intense, high-quality milk chocolate or even white chocolate works wonderfully as a sweet alternative.
  4. Coconut Oil: If you cannot use coconut oil, cocoa butter is an excellent scientific substitute that maintains the solid-at-room-temperature fat structure.

At the end of the day, these little bites are proof that you do not need an oven or a culinary degree to create something truly spectacular. I hope they bring a little bit of sweet, stress-free joy to your kitchen this week!
