Buffalo Chicken Bombs

Fluffy, golden biscuit dough stuffed with cream cheese, spicy buffalo chicken, and melted mozzarella, baked to perfection and brushed with garlic butter.

Buffalo Chicken Bombs
Why This Recipe Works:
  • Low-moisture mozzarella prevents steam buildup, keeping the cheese inside the bomb where it belongs.
  • Brushing with garlic butter immediately post-bake keeps the biscuit crust incredibly soft instead of leathery.
  • The vinegar in cayenne pepper sauce breaks down chicken proteins, ensuring a tender, juicy filling.

I still remember the exact Tuesday night my old, dented aluminum baking sheet buckled in the oven with a loud metallic pop, sending three of my early, poorly sealed buffalo chicken experiments rolling into the oven floor.

My knuckles were covered in orange grease as I fished out the charred, leaking dough balls, realizing my lazy folding technique had completely betrayed me.

Here is the thing I wish someone told me: standard canned biscuit dough has a high moisture content that steam-expands rapidly, which pressure-ruptures weak seams and lets the cheese escape.

To fix this, we must use a dry, low-moisture mozzarella and actively degas the dough by pressing it flat with your palms before wrapping.

You can absolutely do this.

If you love my Crispy Buffalo Chicken Taquitos, this doughy, cheesy variation is going to blow your mind.

Ingredients

  • 2 cups cooked shredded chicken breast
  • 4 oz cream cheese, softened
  • 1/2 cup Frank's RedHot sauce
  • 1 cup low-moisture shredded mozzarella cheese
  • 1 can (16.3 oz) refrigerated flaky layers biscuits
  • 2 tbsp unsalted butter, melted
  • 1/2 tsp garlic powder
  • 1/2 tsp Diamond Crystal kosher salt
  • 1 tbsp chopped fresh chives

Directions

  1. Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. In a medium bowl, mix the shredded chicken, softened cream cheese, hot sauce, and kosher salt until fully combined and smooth.
  3. Separate the biscuit dough into 8 individual biscuits, then use your fingers to press each biscuit flat into a 5-inch round.
  4. Place a generous tablespoon of the chicken mixture and a pinch of mozzarella in the center of each dough round.
  5. Gather the edges of the dough over the filling, pinch them tightly together, and twist to seal completely.
  6. Place the bombs seam-side down on the prepared baking sheet, leaving at least 2 inches of space between them.
  7. Bake for 15 minutes, or until the tops of the biscuits are deep golden brown.
  8. Stir the garlic powder into the melted butter, brush it generously over the hot bombs, and sprinkle with fresh chives before serving.

Notes

  • Salt Conversion: This recipe specifies Diamond Crystal kosher salt; if you are using fine table salt, reduce the amount to 1/4 teaspoon to avoid over-salting.
  • The Vinegar Science: Cayenne pepper sauce contains vinegar, which acts as a mild tenderizer for the chicken breast, keeping the filling moist during baking.
  • Pan Warning: Keep an eye on the bottom of the biscuits; cheap, dark baking sheets transfer heat too quickly and will scorch the bottoms before the cheese melts.
  • Storage Behavior: After a day in the fridge, the biscuit crust loses its crispness, but a quick run in the air fryer revives it perfectly.

Serving Suggestions

Serve these hot out of the oven when the cheese pull is at its absolute peak. They make a fantastic centerpiece for any casual gathering or weekend game night.

  • Drizzle with extra ranch or blue cheese dressing for a classic pairing.
  • Pair with crispy celery and carrot sticks to cut through the rich, spicy heat.
  • Serve alongside my Garlic Parmesan Potato Wedges for a complete pub-style feast.
  • If you want to switch up your buffalo game, try serving these alongside my Spicy Buffalo Chicken Stuffed Peppers.
  • For a lighter alternative on the side, try a simple green salad with a zesty vinaigrette.

Storage and Reheating

If you happen to have leftovers, let them cool completely on a wire rack before packing them into an airtight glass container.

Storing them while warm creates condensation, which turns your beautiful golden crust into a sad, soggy sponge.

They keep in the fridge for up to three days.

To reheat, please step away from the microwave unless you enjoy rubbery dough; instead, pop them into a 350°F air fryer for four minutes to restore that flaky, buttery crunch.

Ingredient Substitutes

Here are a few easy swaps if your pantry is looking a little bare on prep day:

  1. Canned Biscuits: You can use puff pastry sheets cut into squares, though they will be much flakier and more delicate to seal.
  2. Shredded Chicken: Leftover rotisserie chicken works beautifully, or you can use canned chicken in a pinch (just drain it thoroughly).
  3. Frank's RedHot: Any cayenne-based hot sauce will do, but avoid super thick BBQ-style sauces as they alter the moisture balance. If you prefer a milder flavor, check out my Buffalo Chicken Bowls for inspiration on adjusting spice levels.
  4. Mozzarella: Provolone or Monterey Jack make excellent melty alternatives.

Let me know if you make these, and please, pinch those seams like your life depends on it!
