  • 3 tbsp Frank's RedHot original cayenne pepper sauce

  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup crumbled blue cheese
  • 4 thick slices sourdough bread
  • 2 tbsp unsalted butter, softened
  • 1/4 tsp Diamond Crystal kosher salt

Directions

  1. In a medium bowl, vigorously mix the shredded chicken, Frank's RedHot sauce, and softened cream cheese until fully combined and emulsified.
  2. Spread softened butter evenly on one side of each sourdough bread slice. Spreading cold butter can get a tad clumsy, so make sure it is truly at room temperature.
  3. Place two slices of bread, butter-side down, in a cold cast-iron skillet.
  4. Layer half of the Monterey Jack cheese, the buffalo chicken mixture, the blue cheese crumbles, and the remaining Monterey Jack cheese onto the bread slices.
  5. Top with the remaining bread slices, butter-side up. Tap your spatula gently against the top bread slice to settle the filling.
  6. Turn the heat to medium-low. Cook slowly for 4 to 5 minutes per side, pressing gently with a spatula, until the bread is deeply golden brown and the cheese is completely melted. Serve immediately.
