Buffalo Chicken Sliders
These easy Buffalo Chicken Sliders are made with juicy shredded chicken, spicy buffalo sauce, and melted cheese on sweet Hawaiian rolls.
- Pre-toasting the bottom buns with butter creates a protective barrier that prevents sogginess.
- Emulsifying the buffalo sauce with real butter coats the shredded chicken fibers evenly without pooling.
- Baking covered first melts the cheese completely, while a final uncovered bake crisps the sweet roll tops.
I still remember the disastrous Super Bowl party of 2018 when I tried to serve individual buffalo wings to twenty screaming football fans in my tiny apartment. My hands were permanently stained orange, and I spent half the game scrubbing hot sauce off my favorite linen apron.
It was a total mess.
The next year, I tried making sliders, but they turned into a soggy, structural nightmare because the watery store-bought hot sauce completely dissolved the bottom buns. Bear with me here, because the physics of bread steam is actually important. When you bake sliders, the steam from the chicken gets trapped, breaking down the starch gelatinization in the bread and leaving you with a mushy paste instead of a crisp, toasted base.
The fix is brushing the rolls with melted butter and pre-toasting them. This creates a hydrophobic fat barrier that keeps the buns structurally sound.
Now, I make these sliders for every game day, and they are hands down the easiest crowd-pleaser in my recipe book. If you love this flavor profile, you should also try my Buffalo Chicken Stuffed Shells for a cozy weeknight twist.

Ingredients
- 12-pack sweet Hawaiian rolls
- 3 cups shredded cooked chicken
- 3/4 cup Frank's RedHot Original Cayenne Pepper Sauce
- 4 tablespoons unsalted butter, melted (divided)
- 1 1/2 cups shredded low-moisture mozzarella cheese
- 1/2 cup crumbled blue cheese
- 1/2 teaspoon Diamond Crystal kosher salt
- 1/4 teaspoon garlic powder
- 1 tablespoon honey
- 1 tablespoon sesame seeds
Directions
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- Slice the entire sheet of Hawaiian rolls in half horizontally, keeping the individual rolls connected.
- Place the bottom half of the rolls in the prepared baking dish and brush with 1 tablespoon of melted butter, then bake for 5 minutes to create a protective crust.
- In a medium bowl, whisk together the Frank's RedHot sauce, 2 tablespoons of melted butter, honey, garlic powder, and Diamond Crystal kosher salt.
- Toss the shredded chicken in the buffalo sauce mixture until every strand is thoroughly coated.
- Spread the buffalo chicken evenly over the toasted bottom buns, then top with the shredded mozzarella and crumbled blue cheese.
- Place the top buns over the cheese, brush with the remaining 1 tablespoon of melted butter, and sprinkle with sesame seeds.
- Cover the dish with aluminum foil and bake for 15 minutes, then remove the foil and bake for an additional 5 minutes until the tops are golden brown and the cheese is completely melted.
Notes
- I highly recommend using Frank's RedHot Original Cayenne Pepper Sauce. If you use a generic brand, convert the measurements carefully as acidity levels vary; stick to 3/4 cup (180ml) for the perfect balance.
- Low-moisture mozzarella is essential here because its tight protein matrix melts beautifully without releasing excess water, which would otherwise make the bottom buns soggy.
- Keep a close eye on the sliders during the last 5 minutes of baking. The sugar in the sweet Hawaiian rolls can burn incredibly fast once the foil is removed.
- After a day in the fridge, the bread will inevitably lose some of its crispness. However, you can revive them beautifully in an air fryer at 320°F for 4 minutes.
Serving Suggestions
Serve these sliders hot right out of the oven while the cheese is still stretchy and warm. They pair beautifully with cool, crisp sides to balance the spicy kick of the buffalo sauce.
- A side of Easy Homemade Dill Pickles to cut through the rich cheese.
- Crisp celery and carrot sticks with a side of creamy ranch or blue cheese dressing.
- A basket of hot, salty Crispy Waffle Fries.
- A cold, refreshing craft beer or a fizzy soda.
Storage and Reheating
Store any leftovers in an airtight container in the fridge for up to three days.
Do not even think about using the microwave to reheat these. The microwave will turn the sweet Hawaiian rolls into a rubbery, sad mess that clings to your teeth.
Instead, use your oven. Bake them wrapped in foil at 350°F for 10 minutes.
If you are in a rush, the air fryer is your absolute best friend here. Pop them in at 320°F for 3 to 4 minutes, and the tops will get incredibly crispy again while the cheese remelts perfectly.
Ingredient Substitutes
If you need to swap things out based on what is in your pantry, here are the best tested alternatives.
- Hawaiian Rolls: If you cannot find sweet rolls, any soft slider buns or even Mini Grilled Cheese Hawaiian Rolls can be adapted for a fun twist.
- Blue Cheese: If you absolutely despise blue cheese, simply swap it out for extra mozzarella or sharp cheddar.
- Shredded Chicken: Leftover turkey or even canned chicken (drained well) works in a pinch, though rotisserie chicken remains the gold standard.
- Buffalo Sauce: You can substitute with a mild BBQ sauce if you are cooking for kids who cannot handle any heat.
I hope these sliders bring as much joy to your next game day as they do to mine. Just remember to keep some extra napkins nearby, tap your tongs against your hip for good luck, and enjoy every single cheesy, spicy bite!
