Ingredients
- 12 oz jumbo pasta shells (about 24 shells)
- 3 cups shredded cooked chicken breast
- 8 oz full-fat brick cream cheese, softened
- 1/2 cup Frank's RedHot Original Cayenne Pepper Sauce
- 1/2 cup ranch dressing
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup crumbled blue cheese
- 1/2 tsp Diamond Crystal kosher salt
- 2 green onions, thinly sliced
Directions
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- Boil the jumbo shells in salted water for exactly 9 minutes, then drain and rinse with cold water to stop the cooking process.
- In a large bowl, beat the softened cream cheese, hot sauce, ranch dressing, kosher salt, and half of the mozzarella until smooth.
- Fold in the shredded chicken and half of the sliced green onions until the mixture is fully combined.
- Stuff each cooked shell with about 2 tablespoons of the chicken mixture and arrange them in the prepared baking dish.
- Sprinkle the remaining mozzarella and crumbled blue cheese over the top of the shells.

Notes
- Use Frank's RedHot Original Cayenne Pepper Sauce (not buffalo wing sauce). If substituting with a generic brand, note that acidity levels vary; use 1/2 cup (120ml) for the perfect balance.
- Full-fat brick cream cheese is essential. Low-fat or tub cream cheese contains more water and stabilizers, which will cause the filling to break and turn watery under high heat.
- Keep a close eye on the oven during the last 5 minutes of baking. The sugars in the ranch dressing and hot sauce can scorch quickly if your oven runs hot.
