Cheesy Garlicky Pillowy Goodness
These homemade cheesy garlic pillows are soft, buttery, and packed with gooey melted mozzarella. Learn the science behind the perfect cheese-stuffed roll!
- Low-moisture mozzarella prevents the dreaded blowout.
- Double-proofing creates that signature pillowy, cloud-like texture.
- Grating fresh garlic directly into warm butter coaxes out the oil-soluble flavor compounds without burning them.
I still remember the chilly October night my kitchen smelled so intensely of roasted garlic that my neighbor knocked on the window just to ask if she could sit on my floor and watch the oven.
I was covered in flour up to my elbows.
My early attempts at stuffing cheese inside yeast dough were absolute disasters, mostly because the mozzarella would aggressively burst through the seams, leaving a sad, hollow bread shell on a sheet pan of burnt dairy—a tragedy that made me wish I had just stuck to making homemade mozzarella sticks instead.
Cheap grocery store mozzarella brands failed every single test because their high water content turned the dough into a soggy, steaming mess from the inside out.
The physics of this is fascinating: we need a tight protein matrix to trap the steam, which is why we knead the dough until our forearms ache. This development of gluten creates a strong, elastic web that stretches as the yeast produces carbon dioxide. Without this structural integrity, the cheese would simply break free and escape.
If you are short on time, you can always try my Pillsbury Biscuit Garlic Butter Cheese Bombs, but making this dough from scratch is hands down the most rewarding thing you will do this week.

Ingredients
- 3 cups all-purpose flour (360g)
- 1 packet active dry yeast (2 1/4 tsp)
- 1 cup warm milk (110°F / 43°C)
- 1 tbsp sugar
- 1 1/2 tsp Diamond Crystal kosher salt
- 4 tbsp unsalted butter, softened
- 6 oz low-moisture mozzarella cheese, cut into 12 cubes
- 4 tbsp unsalted butter, melted (for brushing)
- 3 cloves garlic, grated
- 1 tbsp fresh parsley, finely chopped
Directions
- In a large bowl, whisk warm milk, sugar, and yeast. Let sit for 5 minutes until frothy.
- Add flour, Diamond Crystal kosher salt, and softened butter. Stir until a shaggy dough forms.
- Knead on a lightly floured surface for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.
- Punch down the dough and divide into 12 equal portions. Flatten each portion into a disc.
- Place a cube of mozzarella in the center of each disc. Wrap the dough around the cheese and pinch the seams tightly to seal.
- Place the rolls seam-side down in a greased 9x13 inch baking dish. Cover and let rise for 20 minutes.
- Preheat oven to 375°F (190°C). Bake the rolls for 15-18 minutes until golden brown.
- While baking, mix melted butter, grated garlic, and parsley. Brush generously over the hot rolls immediately after baking.
Notes
Keep these tips in mind for the absolute best results:
- We highly recommend using Diamond Crystal kosher salt; if you only have standard table salt, reduce the amount by half (use 3/4 teaspoon instead of 1 1/2 teaspoons) to avoid an oversalted dough.
- Low-moisture mozzarella is non-negotiable here because fresh mozzarella contains too much water, which vaporizes during baking and tears through the gluten structure, causing a massive cheese blowout.
- Grate your garlic into the melted butter after it has cooled slightly; raw garlic added to boiling-hot butter will instantly turn bitter and acrid, ruining the delicate topping.
- After a day in the fridge, the starch molecules in the bread will undergo retrogradation, making them firm up, but a quick 15-second zap in the microwave will gelatinize those starches again, restoring the pillowy texture.
- Ensure your milk is between 105°F and 115°F; anything hotter than 120°F will instantly kill the yeast cells, leaving you with dense, sad hockey pucks.
Serving Suggestions
These warm, buttery pillows are spectacular on their own, but pairing them with the right accompaniments turns them into an absolute feast.
- Dip them in a warm bowl of marinara sauce for a classic pizza-parlor experience.
- Serve them alongside our creamy cheese sauce for an indulgent double-cheese dip.
- Pair them with a crisp, refreshing salad like our Japanese cucumber salad to cut through the rich butter.
- Use them to scoop up the savory gravy from a hearty plate of Tender Chicken Pillows.
- Serve them as the ultimate side bread for a cozy pasta night.
Storage and Reheating
Do not let these sit out on the counter overnight.
Because of the high moisture content of the cheese and the butter brush, they will get soggy if left at room temperature in a sealed container. Instead, let them cool completely to prevent condensation, then wrap them tightly in foil and store them in the refrigerator for up to four days.
To reheat, avoid the oven if you are in a rush, but never use the microwave for more than twenty seconds or the bread will turn into leather.
The absolute best method is to pop them back into a 350°F oven, wrapped in foil, for about eight minutes. This heats the cheese back to its glorious, stretchy state without drying out the crust.
Ingredient Substitutes
If you find yourself missing a few key items, don't panic—here are the easiest swaps that won't ruin your bake.
- Active Dry Yeast: You can swap this 1:1 with instant yeast; just skip the 5-minute proofing step and mix it directly with the dry ingredients.
- All-Purpose Flour: Bread flour can be used instead, which actually gives the rolls a slightly chewier, more artisanal texture due to the higher protein content.
- Whole Milk: Unsweetened oat milk or almond milk works beautifully as a dairy-free alternative, though you will lose a tiny bit of the rich flavor.
- Mozzarella: Provolone or Monterey Jack make excellent melting substitutes if you want a sharper flavor profile.
There is something deeply therapeutic about pulling a tray of these golden, glistening rolls out of the oven and watching the steam rise as you tear one open. Gather your favorite people, pour some drinks, and let everyone dive in while the cheese is still hot and stretchy.
