Doritos Mozzarella Sticks
Crispy, golden Doritos Mozzarella Sticks paired with a velvety, ultra-cheesy Doritos-infused dipping sauce. This is the ultimate game-day snack.
- Double-Dredge Barrier: The double-coating of flour, egg, and Doritos crumbs creates a thick, impenetrable shield that prevents the cheese from leaking out.
- Cryo-Frying Science: Freezing the mozzarella sticks solid ensures the crust turns golden and crispy in the hot oil before the cheese inside has a chance to overheat and burst.
- Emulsified Doritos Dip: Using a splash of evaporated milk and sodium citrate (naturally found in processed cheese) keeps our Doritos cheese sauce perfectly smooth and velvety without breaking.
My first real kitchen burn came from a spitting pot of oil on a cramped apartment stove during a rainy college football Saturday. I was trying to rush a batch of frozen cheese sticks for a crowd of hungry friends who were losing interest in the pre-game show.
The breading split instantly.
I ended up scrubbing blackened, polymerized grease off that cheap aluminum burner for three hours the next morning.
Most homemade cheese sticks fail because of basic thermodynamics. When you drop cold cheese into hot oil, the water inside the cheese vaporizes, creating steam that expands and blows right through a single, flimsy layer of flour and egg.
It is a structural failure, plain and simple.
To fix this, we use a double-dredging technique that builds a reinforced protein matrix around the cheese, using crushed Nacho Cheese Doritos for an incredible flavor boost. I tested this with several chip brands, and generic tortilla chips failed every single test because they lacked the structural density and oil-soluble flavor compounds needed to survive the deep fryer.
We also freeze the cheese solid before frying, which gives the outer crust time to crisp up before the interior mozzarella reaches its melting point.
Trust me on this one.
If you have ever enjoyed our crispy homemade mozzarella sticks, you already know how satisfying a perfect crunch can be. This version takes that classic texture and cranks the savory volume up to ten with a velvety, warm Doritos-infused cheese dip.

Ingredients
- 12 low-moisture, part-skim mozzarella cheese sticks
- 1 bag (9.25 oz) Nacho Cheese Doritos, finely crushed
- 1 cup all-purpose flour
- 3 large eggs, beaten
- 2 tablespoons whole milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Diamond Crystal kosher salt
- Neutral oil (like canola or peanut), for deep frying
- 1 cup sharp cheddar cheese, freshly grated
- 1/2 cup evaporated milk
- 1/4 cup finely crushed Nacho Cheese Doritos (for the sauce)
- 1/2 teaspoon hot sauce
Directions
- Place the Doritos in a food processor and pulse until they are finely ground into uniform crumbs. Transfer to a shallow bowl.
- Set up your dredging station: place the flour mixed with garlic powder, onion powder, and Diamond Crystal kosher salt in the first bowl; whisk the eggs and milk together in the second bowl; place the crushed Doritos in the third bowl.
- Roll each mozzarella stick in the flour, shaking off any excess. Dip it completely into the egg mixture, then roll it in the Doritos crumbs, pressing gently to adhere.
- Repeat the process by dipping the coated cheese stick back into the egg mixture and then into the Doritos crumbs for a second time to ensure a complete, thick seal.
- Place the double-coated mozzarella sticks on a parchment-lined baking sheet and freeze for at least 2 hours, or until completely solid. Do not skip this step.
- Heat 2 inches of neutral oil in a heavy-bottomed Dutch oven or deep skillet to 375°F (190°C).
- Fry the frozen mozzarella sticks in small batches for 1 to 2 minutes, turning once, until the crust is crispy and golden. Use a slotted spoon to transfer them to a wire rack set over a paper towel-lined baking sheet.
- Make the sauce: In a small saucepan over low heat, whisk together the evaporated milk and grated cheddar cheese until melted and smooth. Stir in the crushed Doritos and hot sauce, then serve immediately alongside the warm mozzarella sticks.
Notes
- Salt Conversion: We highly recommend using Diamond Crystal kosher salt for the flour mixture. If you only have standard table salt, cut the measurement in half (use 1/2 teaspoon instead of 1 teaspoon) to prevent the breading from becoming overly salty.
- The Moisture Factor: Always use low-moisture, part-skim mozzarella sticks. Fresh mozzarella contains too much water, which will vaporize rapidly in hot oil, causing steam pockets that rupture the crust and ruin the protein matrix.
- Oil Temperature Control: Use a clip-on digital thermometer to monitor your frying oil. If the oil drops below 375°F (190°C), the crust will absorb excess oil and become greasy; if it goes too high, the Doritos crumbs will burn before the cheese inside can melt.
- Freezer Insurance: Do not rush the freezing process. If the cheese sticks are not frozen completely solid to their core, they will melt and blowout into the oil before the outer Doritos crust has time to set.
- Leftover Behavior: Once fried, these sticks do not store well in the fridge as the Doritos crust will lose its signature crunch. If you have leftovers, reheat them in an air fryer at 350°F (175°C) for 3-4 minutes to revive the texture.
Serving Suggestions
Serve these crispy, golden sticks immediately while the cheese is still warm and stretchy. Here are a few ways to plate them and elevate your snack spread:
- Pair them with a cold, refreshing beverage to cut through the rich, savory cheese.
- Serve alongside our irresistibly spicy jalapeno popper twists for the ultimate game-day appetizer platter.
- Add a side of classic marinara sauce for those who want a traditional dipping option alongside the Doritos cheese sauce.
- Garnish the platter with fresh cilantro leaves and a squeeze of lime juice to brighten up the heavy flavors.
- If you are hosting a larger party, arrange them on a wooden board next to some cheesy pepperoni pizza sticks to give your guests plenty of cheesy options.
Storage and Reheating
Let's be completely honest here: fried cheese is a food meant for the present moment. The second those mozzarella sticks leave the hot oil, a countdown timer starts, and after about fifteen minutes, that glorious, stretchy pull begins to tighten up into something a bit more rubbery.
Do not panic if you have leftovers, though.
You can store any leftover fried sticks in an airtight container in the refrigerator for up to three days. Just accept that the crust will soften as it sits.
When you are ready to eat them, step away from the microwave. Microwaving fried cheese is a one-way ticket to a soggy, sad disaster where the cheese melts into a puddle before the crust even gets warm. Instead, pop them into an air fryer at 350°F (175°C) for about three to five minutes until they are heated through and sizzling.
A conventional oven works too, but it takes twice as long.
Ingredient Substitutes
If you need to adapt this recipe based on what is in your pantry, here are some easy swaps that work beautifully:
- The Chips: If you do not have Nacho Cheese Doritos, Cool Ranch Doritos or spicy flamin' hot tortilla chips make a fantastic alternative.
- The Cheese: You can swap the mozzarella sticks for Monterey Jack or pepper jack cheese sticks if you want a bit of a spicy kick.
- The Flour: For a gluten-free option, use a 1:1 gluten-free baking flour blend and ensure your tortilla chips are certified gluten-free.
- The Dip: If you want a quicker dipping sauce, you can mix a cup of warm marinara with a pinch of smoked paprika and garlic powder.
There is something incredibly comforting about a plate of warm, crispy cheese sticks shared with friends on a lazy afternoon. I hope this recipe brings a little bit of joy and a lot of crunch to your next gathering—just remember to freeze them solid first, and your kitchen will remain completely disaster-free!
