Ingredients

  • 1.5 cups (180g) all-purpose flour
  • 1.5 tsp baking powder
  • 1/2 tsp Diamond Crystal kosher salt (or 1/4 tsp fine table salt)
  • 6 tbsp (85g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar, divided
  • 1 large egg, room temperature
  • 1/2 cup (120ml) whole milk
  • 1 tsp vanilla extract
  • 1 pound (450g) fresh strawberries, hulled and halved

Directions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch or 10-inch cast-iron skillet with butter.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and Diamond Crystal kosher salt.
  3. In a large bowl, beat the softened butter and 7/8 cup of the granulated sugar until pale and fluffy, about 3 minutes. Save the remaining sugar for sprinkling.
  4. Beat in the egg and vanilla extract until fully incorporated and smooth.
  5. Alternate adding the flour mixture and the whole milk, starting and ending with the flour, mixing on low speed just until combined.
  6. Spread the thick batter evenly into the prepared skillet using an offset spatula.
  7. Arrange the strawberry halves, cut-side down, closely together on top of the batter.
  8. Sprinkle the remaining sugar over the berries and bake for 35 to 40 minutes, until the top is golden and a toothpick inserted in the center comes out clean.

Notes

  • Salt Conversion: This recipe specifies Diamond Crystal kosher salt. If you are using fine table salt, cut the measurement in half to 1/4 teaspoon to avoid an overly salty crumb.
  • Temperature Matters: Ensure your egg and milk are at room temperature before mixing. Cold ingredients will cause the creamed butter to seize, ruining the emulsion of the batter.
  • Cast-Iron Warning: Cast iron retains heat long after being pulled from the oven. Remove the cake when a toothpick has just a few moist crumbs attached so it does not overcook on the counter.
  • Storage Behavior: Because fresh strawberries release moisture over time, the cake will soften significantly by day two. Store it loosely covered rather than in an airtight container to keep the top from getting sticky.
