Drunk Bunny
A creamy, pastel-pink Easter cocktail featuring white chocolate liqueur, coconut rum, and a splash of fresh strawberry puree, shaken until ice-cold.
- White chocolate liqueur provides a stable, pre-emulsified fat matrix that won't curdle when mixed with mild fruit acids.
- Double-straining the strawberry puree removes seeds, ensuring a silky-smooth mouthfeel.
- Shaking with large ice cubes rapidly chills the drink, diluting it just enough to open up the coconut and vanilla aromatics.
Three Easters ago, I tried to make a festive cocktail using marshmallow peeps melted into cheap vodka.
It was a sticky, curdled disaster that cemented my reputation as the family's mad scientist, leaving me scrubbing pink goo off my shaker for days. I learned my lesson.
Most Easter cocktails fail because people try to mix heavy cream with acidic fruit juices or cheap spirits, which instantly drops the pH of the milk proteins. This causes the casein to clump together, leaving you with a gritty, curdled mess in your glass. I tested this with three different brands of coconut cream, and the cheaper ones separated into oily slick layers within minutes of pouring.
The simple fix is using a pre-emulsified white chocolate liqueur as your fat base, which holds its structure beautifully when shaken with coconut rum and a strained strawberry puree. Shake it until your fingers literally freeze to the metal shaker.
Trust me on this one.

Ingredients
- 2 oz white chocolate liqueur
- 1 oz coconut rum
- 1 oz heavy cream
- 0.5 oz fresh strawberry puree (strained)
- 1 cup ice cubes (for shaking)
- 1 tbsp honey (for rimming)
- 2 tbsp toasted shredded coconut (for rimming)
Directions
- Pour the honey onto a small, flat plate, and spread the toasted shredded coconut onto a second plate.
- Dip the rim of a coupe glass first into the honey, then gently press it into the toasted coconut to coat the edge.
- In a cocktail shaker, combine the white chocolate liqueur, coconut rum, heavy cream, and strained strawberry puree.
- Fill the shaker with ice cubes, seal tightly, and shake vigorously for 15 seconds until the outside of the shaker is frosted.
- Double-strain the cocktail through a fine-mesh strainer into the prepared coupe glass to catch any stray ice shards.
Notes
- Brand Recommendation: I highly recommend using Godiva white chocolate liqueur and Malibu coconut rum for the cleanest flavor profile. If you prefer to measure in milliliters, 1 ounce is equivalent to approximately 30ml.
- The Science of Dairy: The high fat content in heavy cream (36% butterfat) acts as a physical barrier that coats the milk proteins, preventing them from clumping together when they meet the mild fruit acids in the strawberry puree.
- Workflow Warning: Never add fresh pineapple juice to this shaker; the active enzyme bromelain will digest the dairy proteins instantly, turning your beautiful pastel drink into a watery, bitter mess.
- Storage Behavior: This drink must be served immediately after shaking. If left to sit, the dense sugars in the liqueur will settle, and the dairy fats will separate into an unappealing cap.
Serving Suggestions
Serve this whimsical drink in a chilled coupe glass alongside some festive snacks to balance the sweetness of the white chocolate.
- Pair it with a sweet treat like our Easter Bunny Munch.
- Serve it alongside savory holiday appetizers like Million Dollar Deviled Egg Chicks.
- Complement the strawberry notes with a slice of Easter Poke Cake.
- Balance the rich dairy with a light dessert like Lemon Curd Easter Cupcakes.
- Garnish the glass with a toasted marshmallow bunny on a bamboo cocktail pick.
Storage and Reheating
Don't save this for later.
Cream-based cocktails are notorious for separating once the ice melts and dilutes the emulsion. If you must prep ahead, batch the alcohol and strawberry puree in a jar, but keep the dairy separate until you are ready to shake.
Store the pre-mixed alcohol base in the fridge for up to two days.
When guests arrive, simply measure out the base, splash in the cream, and shake with fresh ice. This keeps the drink frosty and perfectly emulsified without any watery separation.
Ingredient Substitutes
If you need to adapt this recipe for dietary needs or pantry limitations, these swaps work beautifully:
- White Chocolate Liqueur: Swap with white creme de cacao mixed with an extra splash of heavy cream and a drop of vanilla extract.
- Coconut Rum: Use silver rum mixed with a tiny drop of food-grade coconut extract.
- Heavy Cream: Use full-fat canned coconut cream for a dairy-free alternative, though you must whisk it smooth before measuring.
It is hands down the most festive drink I have ever served, and nobody will be scrubbing pink goo off the ceiling this year.
